Hi Guga - recipe for Eye of round - the tough meat. Basically slow cooked stew, so the meat falls apart. Take about 2 pounds of the eye of round, chop to cubes. Take 1 onion, 2 tomatoes, pepper, salt and olive oil to make a puree / marinade. Marinate the eye of round cubes overnight. Next day put the eye of round meat with the puree, add chopped carrots, black pepper, stock cube, mustard seeds, 3 clovers, bunch of juniper berries and bay leaves. Add boiling water and boil the whole thing for 3-4 hours until the meat is pull apart tender. Then serve this with soft-boiled potatoes and pickles. I'd say its pretty good. Cheap meat, prepared in a way that tastes good. Meat needs to be soft for this..

Not all hot pot has to be spicy like this, I grew up mostly with just boiled water and the ingredients you add will flavor the soup but this spicy mix does look amazing.

Yes, the hotpot doesn't even mean it should has to be spicy. The hotpot should be starting with base chicken's/beef's bond stock. Then people will add the various vegies, meats to the pot for boiling and eat. The stock will then be used together with noodles and it is very rich and flavorful.

We love hot pot in the winter, especially because it gets cold where we are. That said, Hot Pot is called that not because it's spicy but because it's heated at the table. So, feel free to do it with just water or a meat/veggie broth.

I'm curious what country does a specific oil for hot pot. I know it's not Korea, Taiwan, or Japan. Been watching their coking shows and dramas for decades. They all use broth in their hot pots, not oil. Of those, I've only seen South Korea use a chili oil at all, and that's as a side sauce for dipping, alongside soy sauce, vinegar, and mustard. And that's only in some places - not all hot pot places have it.

Great video Guga! You don't necessarily have to make the hotpot oil from scratch, instead Asian supermarkets and even Amazon sell soup base kits. The flavor is insane and honestly tastes better than what you can make at home. Little sheep is my go-to brand and it's even available online. I do wonder, what would happen if you tried to cook the steaks in the hotpot oil, I'd assume it'd be similar to frying a steak?

Guga I marinated a ribeye in the juice from a jar of green olives. I wet the steak down with the juice and seasoned it with salt, garlic powder, and pepper. I only did it overnight but it turned out delicious. Maybe a dry age experiment with the olive juice. Good cooking 👍👍👍

My family does something familiar. Instead we use lots of butter, garlic and anchovy paste for the hot pot. We use steak, lobster, mushrooms, scallops, shrimp, sausage, and some veggies. When done cooking we put on a sliced piece of French bread to soak up the butter. We call the bread our plate. Once the butter soaks through the plate we eat it and start over. It used to be a last man standing meal. Use fondue forks or regular forks. Grandma cheated and used a slotted spoon. Lol.

There are pre-made hot pot squares with beef tallows already mixed in, all you need to do is to heat it up in a pan then it will turn into hot pot sauces.

You are correct! That's a good looking chili oil he made. Hot pot pertains to the temperature not to any necessary spiciness.

There are many varieties. Hot pot really just means "pot of boiling stuff you use to cook on the table". Can be some type of broth, some sort of oil or as you said just plain water that gets flavor from the dipping ingredients themselves.
