Best Kefir Flatbreads with Potatoes and Cheese! They disappear in no time!
Ingredients:
- 5 fl oz (150 ml) kefir or liquid yogurt
- 1/2 teaspoon baking soda
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 cups all-purpose flour (300 grams)
- 20 ounces (600 grams) potatoes
- Ham, diced
- 7 ounces (200 grams) soft cheese (mozzarella or suluguni)
- Black pepper
- Butter
Instructions:
1. In a bowl, combine kefir (or liquid yogurt) with baking soda, sugar, salt, and olive oil. Mix well with a whisk.
2. Gradually add all-purpose flour to the liquid mixture, stirring with a spoon until absorbed.
3. Knead the dough by hand for about 4 minutes until it's soft and sticks only to itself. Cover the dough and let it rest.
4. Peel and dice the potatoes. Cook them in boiling water until soft (about 15 minutes).
5. Drain the potatoes and mash them into a puree. Add a little black pepper, salt, and butter to taste.
6. Mix in the diced ham and grated cheese with the mashed potatoes.
7. Divide the filling into 4 parts and shape them into potato balls.
8. Divide the dough into 4 parts and roll each into a ball.
9. Roll out each ball of dough thinly.
10. Place a potato ball in the middle of each rolled-out dough and wrap the dough around it.
11. Press the filled dough lightly with your palms to increase its diameter.
12. Repeat the process with the remaining ingredients to make more flatbreads.
13. Cook the flatbreads over low heat for about 3 to 4 minutes per side. Cover with a lid while cooking to prevent burning.
14. Optionally, grease the cooked flatbreads with butter for added flavor.
15. Serve and enjoy these delicious and filling flatbreads as a snack or meal!
