Also if you didnt know anytime you see "Natural Flavoring" in the ingredients list there is like a 90% chance that means MSG

MSG is pretty easy to pick up on, if you try it by itself you can pick up on it in what foods it naturally occurs in easily.

Tomatoes are really heavy with MSG, so him pulling that out as a flavour profile is actually accurate! Also, Guga, you might want to have dried out the ketchup first somewhat, to reduce the moisture levels affecting the dry aging process; it was probably more of a wet aged process.

Good catch, there's like 250mg of glutamates per 100gram of fresh tomatoes, even more in the concetrated form they use to make ketchup! Heinz by all accounts also adds MSG to their ketchup as well, under "Natural Ingredients"

I have an idea for dry aging a steak: try aged in dijon mustard. the spice and tang of the mustard would really work well with the steak in terms of flavor.

Sonny is like John Cena in interviews and talkshows, just his expressions, his jokes, and the way he talks reminds me of Cena. Heck, he even sounds a bit like him. And I'm happy that Guga made a video with Sonny since I've been a fan of Sonny since 3 years ago.

In my family we add Bulgarian yogurt to minced meat. This makes our burgers considerably juicier and more delicious. However, we mainly use cheap 50/50 beef/pork meat. It is interesting if this method will work with higher quality meat.

I think we put around 10 grams of yogurt for 100 grams of meat. But these are rough estimations. Generally we decide how much yogurt to put by feel. We are looking for not to liquidate consistency.

Hey Guga, thanks for your great videos. After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. Tomatoes have lots of glutamate in them which can act similarly to MSG when they are concentrated like in tomato sauce. In addition to this it is rumored that some variants of the "natural flavors" ingredient can act as MSG, as can a number of other ingredients such as yeast extract (not in the sauce but it is common in processed foods).

I was just thinking about asking if you ever done a condiments dry age challenge? Suggestions for this from me were going to be ketchup, mustard, A1 steak sauce, Heinz 57, mayo, and miracle whip. I mean this list could go on and on for all the condiments out there! Keep this one going Guga!!!

since ketchup is basically a combination of tomato paste, vinegar, and corn syrup. Why don't you try to dry age steak in a tomato paste instead? It should be easier to be spread into the steak evenly.

For thin sauces like ketchup, you could always reduce them to thicken them up. Adding a little corn starch would help too. Speaking of... What about *Teriyaki* dry age?

This was awesome! Guga, I think the "sweetness" that threw you all off was because it's processed ketchup. What if you blended up some Roma tomatoes and dry aged with that?! I bet that would be phenomenal!

@@galaxya40s95 pretty sure it'd be as safe as "dry aging in water" due to the liquid content. Ketchup has vinegar so it at least makes sense. Maybe a mix of tomato paste and vinegar then.

Gotta try dry aging steaks in different sauces, maybe even some of your own sauces that you've made in the past and enjoyed. As for his guess of MSG, it does naturally occur in tomatoes, so he was on the right path with that guess as well.

Agreed. Like A1 or HP. Or more exotic sauces like hoisin (chinese) or chilli sauce or oil. The guest should feel absolutely comfortable in that the host (sorry, I don't know his name) will not serve anything he's not willing to also eat himself. This isn't Survivor.

Can you try dry aging separately in these two ingredients? - sesame seed paste - fermented malt rice (shio koji). Both should add earthy and nutty flavor, it'd make an interesting comparison.

@@vladimir520 In my country it's pretty common, we've been dry aging and marinating in mustard since forever. And it doesn't need be steak, any meat can be marinated or dry aged in mustard. You make it and you can keep it in the fridge for weeks, it will not spoil. And there is no waste, you don't need discard the outer layers.

You should try this again with home-made ketchup. I feel like the high sugar content of ketchup is the main issue here. This also might prevent the "chemical" taste.

I like Sonny. He fully gets exactly what makes a great steak, great...but he's not a purist steak snob. He's fine with the disparity of texture and flavor, as long as both are enjoyable. . I appreciate that, because I'm a similar way. . That said...don't dry age with ketchup, people...it's weird.

Hi Guga! Here is another idea, dry age in rice. Rice is known to absorb humidity so what would happen if you get the meat covered completely, all around, in rice to dry age?

Why not do a dry age in pureed vegetables? Like onion, green pepper, garlic and some other green like spinach or asparagus. Since we know anything with sugar or high fructose corn syrup ruins the meat. Coating it with pureed things that already pair well with steak and wont ruin it while it dry ages seems like a wise idea.

This was quite an interesting experiment. Personally I am curious what a Wet-Age Steak would taste like when done in pickle juice (non-vinegar variants) like Ba-Tapte Brand pickles (Half Sour or Garlic Dill).

I had a one gallon jar of sweet hot pickles. When the pickles were all gone I threw apple slices and as many chicken thighs as I could pack into the jar with the pickle juice. After 4 days of refrigeration I grilled them with gentle heat. I figured they would be awful, I was wrong! They were fantastic. I only did it as a doomed experiment, but they were unbelievable. I truly did not expect them to be so good. The Pickle company name is "Wickles" (Wicked Pickles). Chicken generally does not excite me, but this was amazing. I hope you try it.

Sonny wasn't entirely wrong when he guessed MSG because despite its tangy taste, tomato/ketchup actually has a high level of glutamate acid. MSG = monosodium glutamate. That guy really knows his stuff. Anyway Guga, how about dry-ageing a steak in oyster sauce?

Guga covered this ages ago when he made his natural MSG seasoning - using, amongst other things, tomatoes. Beef and oyster are a traditional combination, so that could actually work really well

Sonny has been through worse. So the ketchup dry-age would be like a 5 Star Dry age steak compared to it. Between no steak or a ketchup steak, I'd choose the latter too. lol
