ditto, I love the fact that he is always 1) willing to experiment no matter how bland or crazy it sounds 2) willing to show wins and fails 3) Always has a great time and positive attitude. Love watching this guy. True character and great person to watch. I'd love to have a drink or two and maybe try a few steaks with this guy and his crew/fam. You are fantastic!

I work in a laboratory and am amazed that Guga shows the truth: that experiments don't always work out the way you expect or want. You are many times disappointed with the results, but then once in a while you find out something that is really game changing, and this makes it all worthwhile. Always a joy to watch Guga experiment with perfection. I learn something every time.

The specific combination of celery, carrots and onion in the same rough size, used to deglaze when brazing or stewing, is called Mirepoix. It's an important part of many French sauces and gravies and the specific flavor profile of all three in combination with the maillard reaction of meat and fat cooking down, sticking to the pan but not quite burning, creates the rich taste of many meat sauces that you probably know and love.

I would love to see you do the same experiment with a wide range of different alcohols to see what works and what doesn't and what's best. red wine, white wine, vodka, beer, tequila, rum, etc. I'm sure there has to be something in there that's worth it. also, what if you do the same thing with different types of meat? Maybe whiskey doesn't go great with beef, but does with chicken or pork?

For your skirt steak, use half a skanky powerful beer with the beef broth for liquid. Kicks up the savory like you won't believe. Also add a sprig of rosemary and a tied bunch of thyme to the mix while it ovens. You won't regret it.

Hey, mistakes can be happy. It's about learning and improving. I made cornbread from scratch, and it turned out great. Went back to get the weight of the ingredients, so I made it again... but instead of using the 1/3 cup measurement, I used a 1/2 cup measurement... for ingredients that called for 1 1/3 cups of flour, 2/3 cup cornmeal, and 1 cup sugar, you end up with 2 cups flour, 1 cup cornmeal, and 1 1/2 cups sugar... with the proper original measurements for liquids. Turned into a cake, which was a pleasant mistake. A little on the sweet side, but it's now noted as more of a dessert and I'm adjusting it to possibly include a honey butter icing.

Diversas técnicas e análise do sabor constantes. E tinha que ser br pra sanar a dúvida se existia a grande lenda de uma picanha wagyu. Sensacional, acabei de ver o video em Minas... Abraços de São Paulo!
