The sauce to go with balut is a personal preference. Some eat it with vinegar. I prefer to eat it with a tiny amount of salt. I love the soup❗

The one egg w/o an embryo is called penoy or pen noy some duck eggs dont actually develop an embryo so they are called penoy and those who dont eat balut eats the penoy usually penoy also have soup in it and the white part is soft like a 3 miniute egg

The hard white part of the balut is the "egg white", just like what you have in a regular egg. They harden when steamed in a duck egg. Most people don't eat them when it's too hard, but they're edible but lacks any taste.

In the early years of Balut, it was only sold at night. A man carrying a basket, walking on the streets and shouting "Balut!" every 5 seconds. You'd hear them past 8PM. Why? Because they cater mostly to the people who drink alcohol on the street. Nowadays, drinking on the street's not allowed anymore. Back then, a group of men would gather up outside the sari-sari stores and just be ordering cold beers and bag of chips or fried peanuts one after the other. It's now outlawed because men become drunk, become really noisy, cause annoyance to the family of the sari sari store and houses nearby. Fights every now and then breakout. This is why drinking nowadays is only allowed within the confines of a person's home. Going back to Balut, that's when the sellers make their killing. Drunk men crave for something hearty and Balut satisfies that craving.

Get a less developed egg - 18 days - and that white hard stone is very edible. I ate balut once in college but have since chosen to get rid of the embryonic duck whenever I must eat balut. I'm a Filipino La-ing is just dried taro leaves cooked in coco milk and is garnished with pork, shrimps, or dried fish. Throw in chili if you want it spicy Lumpia is either fried or fresh...I prefer the fresh version, the fried one is too oily because more often then not, they are deep-fried. The fresh lumpia comes with a garlic or peanut sauce
