Had just finished deboning a chicken, for practice for deboning a turkey for a turkey roulade for christmas dinner when I saw your reaction for that episode. I remember your comments about actually using a bone for the that when I looked at a turkey leg bone and realized it matched perfectly what this dish could have used. It was long, thin, and had the joints at the ends just like in the show. Plus if you use it from leftovers it would be partially cooked already for less smell and flavor transfer.

I am not sure if you will ever read it, or if someone already told you, but the dishes in the manga were created by a professional chef Yuki Morisaki, but she went on Maternity leave mid-2016, which was around the graduation exam, the second part of season 3. And they blasted through the recipes she prepared and had nothing new, so that is the reason for almost no explanations on how's and why's.

Theoretically, could you have wrapped the bacon around the pate prior to sous viding? You're guaranteed to get quicker sear and that way. Plus the texture of sous vide bacon is fabulous for wrapping things.

You mentioning Korean BBQ reminded me of a conversation my best friend and I had when he was home for Christmas. He lives in Atlanta working as an architectural engineer, and his coworkers and him on fridays will go to 1 of 3 Korean BBQ places near by. talking about how I'll have vacation time this year, I'll be going to Atlanta where we'll check out a bunch of his favorite places to eat, and then w/ some of his time off we're gonna road trip to Texas and check out some of my favorite places to eat in Austin and then Plano (or if it doesn't line up because that's a lot to fit into a week and a half, we may do Texas in Winter) Either way, it'll be a fun time of trying out fun new places to eat and spending time w/ each other which currently we only see each other 1 or 2 days around Christmas each year.

Hello, I enjoy watch your videos, great job and keep doing it. Ps: Here in my country (home made mayonnaise is made with an raw egg(just the yolk) and a boiled egg(just the yolk). Mix them with some mustard and after add salt,pepper and oil(slow) and it's done when the mayonnaise is strong. Please try and see if it's a difference. All the best.

If you want to make stuff sub for liver you can use a red cut and then add some blood somewhere in the sauce/marinade/etc. (you could probably get blood from your butcher/specialty vendor. I'm not sure, I come from the country where it's not hard to get). It's not nearly as gamey as liver and also not nearly as metallic... basically it does a kind of mellow version of liver

One of your most daring attempts, and so many steps to it. It was a lot of fun and very interesting to see you make it and thank goodness it came out pretty successful. Very much looking forward to what you'll attempt next and from which series. As for my favorite style of meat dish, is it fair if I just say plain simple bacon, or just thin chicken cutlets with a lovely, crispy panko breading either baked or fried to perfection? My mind's drawing a bit of a blank beyond that, as I am an annoyingly picky eater, a.k.a the worst nightmare of any chef.

Ok, the mononoke shirt looks epic, sir! I am going to have to get a better technique and skill-level with a knife before I try this one. A sous-vide again? Nice. Honestly, I was expecting you to go for the binder's twine first. The chopsticks are a very good option, and seem like something Soma would do in the absence of a bone. Great Caveman Meat, PK style! Dude, that looks amazing. I love savory stuff, and that looks like fun. As for my favorite style of meat? Uh... I unno. My favorite style of food is breakfast dishes. Bacon, eggs, biscuits. Sausage. That sort of stuff. I guess that counts? I also like when thinks have some chew to them. I used to have pica, which I combatted by chewing gum all the time. Now I still have a strong preference for dense, chewy foods.
