I never realize how some ingredients I have access to are harder to find in other places. I can find foie gras in every grocery store here, but you need to go to a large city and find a specialized store just to find anything miso related. Also, it's "shoo far-see", not "show far-shee" for the pronounciation.

My favorite way to eat cabbage is still when I can charcoal grilled it with spicy yakiniku sauce at Japanese BBQ buffet restaurant. Sadly, the one that I went to often and recently found, is now permanently closed due to local lock-down situation.

Yo! You can freeze your cabbage for one day then thaw for one more, that will break down all the hard cells and you wont even have to blanch it at all. They will soften up and be malleable ;). Then you just finish cooking it with filling inside.

If it uses morels it's a seasonal dish. You just made it at the wrong time of year... If you live in the midwest there are a lot of "spongie huntin" spots. If you're on the west coast you can find black morels.

As someone who actually ate the Foie Gras version i would say.. the Cashew Butter would taste better (my Uncle is a chef and made many Shokugeki Dishes for Family Events). I can imagine the Nutty flavors of the Cashews and Miso work better then the Foie Gras alone. Very well done. Cant wait to try this Version. I will make it once the Corona lockdowns are gone :D

I would have just purchased real fois gras. It would have been richer with real food gras. That cashew butter is too much work and it really doesn't compare to the taste of food. I mean if you have a moral objection to do is then go ahead. There is a great online mushroom purveyor located in Oregon. You can even get matsutaki from them. I order from the all the time.

Definitely not down for foie gras, it's a pretty terrible practice and the cashew butter definitely tastes better than the gras. The morels are hard to find locally, but next time I'll check with ordering online

@@CHEFPKR There are some newer food purveyors that don't force feed. The livers aren't as big, but I remember you said you don't like liver. I've anemic since I was little so organ meat has been a regular part off my life. I'll get you the website for the mushroom purveyor. They have good prices. You're a chef so I'm sure you can get things wholesale. It's a business expense. You are testing recipes for your KZbin channel.

Now, I have to buy some matsutaki to grill for the holiday. Matsutaki in that Chou farce would be amazing or cooking the veg in truffle butter😍😋 I've got ideas!🎵🎶

@@CHEFPKR I love mush rooms so I will buy them. A whole poi n d of morels will not go to waste. You can dry them and rehydrate them or freeze them for use later. I'm a fan of drying. I do that with who takes all the time. I will not waste my money on dried shitakes when I can dry them myself. I use the to make beef stock. I multi-task those bones. The first stock is a western brown stock and the second I'd an Asian white bone stock. Since the Asian stock calls for clean boiled bones to make the white broth. Try that white broth in your in your ramen packaged and see what a difference it makes.

@@CHEFPKR That's okay. Not everyone is okay with the practice. I we raise poultry growing up. There are different way to raise the ducks for foils grad and I don't like the modern method of force feeding myself. Ducks and geese are greedy enough as it is and the right diet gives a fatty enough liver. Since, I love liver and most offal I'm okay with it. So, yeah I made the pate du campagne with liver pork and pistachios. It was amazing. Have you. Considered doing a duck or pork rillete?

After seeing Feast of Fiction trying their hands on the Terrine I understand why you don't want to do it. Quick question is steaming the bacon actually a good way of cooking? I'm seeing it and it looks a little raw or not fully cooked. Then again I'm more used to the bacon being crispy when cooked.

The bacon was definitely cooked through and was tender from being steamed so long... But I prefer mine fried. I'll make the terrine, but I'll be making it my way as the Manga recipe is bad.

You can also boil the whole head in your salt solution before peeling the leaves, and the leaves are easier then to peel away without breakage.

Nice work chef. My question though is what does steamed bacon do for the dish? I have never made any dish that actually uses steamed bacon before. Is it really only there as something to keep the Cabbage Roll together and to provide visual contrast as a garnish or does steamed bacon actually add anything to the taste of the dish as well?
