As a univ student, you may want to just do the mashed potato dehydrating - and place them in a pan of water, stir to boiling, and it is the consistency you want.

i'm so happy to see you teaching the real and safe ways to preserve potatoes. I do grow my own and can most of them up each year....I did read in the Fox Fire books one older gardener who said she would dig up the potato, skin it and then use the potato for whatever and then she's rebury the skins where she had dug up the same potatoes....she had a long long row of them, by the time she got to the end of the row then the beginning of the row had potatoes for her to eat! I'm sure she was using a paring knife so there was more potato meat on those skins...I think I'll give it a try this year. I just had a nice baked potato for dinner last night for dinner.....just the potato and toppings, it was wonderfl! Of course I do love eating the skin so that might be a problem...hmmmm

In most of the world, outside of America, our real and safe way of canning potatoes is water bathing. 99% of us don't have a pressure canner. And... gosh... we even water bath meat. Shocker! (Just like Americans did before pressure canners became a thing, and the FDA told you not to water bath most stuff). We're all still alive. It's a miracle!

This is very helpful. I would like to know how the botulism spores can hide from 240' temps. So far, all of my potato pressure canning attempts have produced less than tasty potatoes. They all have an off putting "canned potato" flavor.

I totally agree with everything you said about potatoes. I have them canned, dehydrated, and freeze dried in different shapes, but have not thought about freezing them. But I do love mashed that have been frozen so they will be next. Thanks!

So true, always have potatoes go bad before using all since buying in bulk. Love all the different ways you showed us how to preserve them. Never thought of freezing. Do add an apple in my potato bin, which seems to help them from ripping to quite.

I found a recipe for tater tots and, yes, it was a lot of work. I froze them (made it easier to cut when ready to cook), and man, was it ever worth it. Also formed and froze some hash brown patties (won't use garlic powder again, will opt for onion) and they were great. I love your idea about the skins. I could probably talk my husband into making a full meal out of them. Thank.

Remember to find out your altitude! I'm at 8500 ft in the Rockies. Water bath isn't practical for anything. It would take over 12 hrs. and still be iffy. So although your sister in Seattle or cousin in Maryland cans for 40 minutes in the pressure canner, in Denver or Salt Lake City you will have a longer time. You can usually find it under "High Altitude Canning" in your canner instructions. Love this channel, really excellent info.

I dehydrated 50 lbs of russet potatoes. They turned out great. So beautifully white. I blanched the mall cubes for 8 minutes, the larger cubes for 10 minutes. For hashbrowns I blanched the whole potato for 25 minutes and then shredded into hash browns. All were peeled. I was very happy with the results. They are beautiful.

I put my cleaned potatoes peelings in a dirty bag with other different scraps which once its full of the different scraps we've collected, we then boil a whole chicken or two and then pull that out and strip the meat off the bones and then put the bones along with the stuff in the dirty and boil it slowly over night, strain it and then can the stock and chicken meat in a pressure canner. Under no circumstances do I want to freeze any, I much rather can or dehydrate them unless it will be for everyday use. Thank you for sharing this.

I want to find a way to make potato chips out of them. I don't eat Pringles due to something in them I'm allergic to but I used to like them. I think they are the only chip that starts as dehydrated potatoes.. I also would love to know how to make the wonderful extruded fries like A&W Rootbeer used to make. Let the search begin.

Right on time. All my July harvested Potatoes have 3-foot-long vines. Time to process and put those guys away to get us through May and June. The Oct harvest will last us until then.

I'm glad I found this channel again. I have been subscribed for a long time. I recently had to get a new phone. And and a lot of my subscriptions weren't on it, So I had to resubscribe. As far as freezing potatoes. I make baked potatoes When they are done I slipped them on the top wrap and foil and freeze when I want one I take it out. Throw it in the oven when it's heated up. I uncovered it and let the skin crisp up.

I will cook a bunch of potatoes in my Instapot.I make mashed potatoe and put them in a oil sprayed muffin pan.When they are frozen I put them in a freezer bag.

Oooooo I really like that crispy potato skin crisp snack you shared at the end. Great idea. I just started pressure canning YESTERDAY, and potatoes are on my list to try next. It's helpful to know that russets aren't the way to go when canning. I prefer golds and reds anyways, unless, of course, it's a crispy, loaded baked potato. 😄 👍🏻

You can freeze baked potatoes. Just bulk bake them, cool completely, and freeze. They should be good for around 3 months, and if you have a vacuum sealer, they'll probably be good way longer!

If your filling your jars up to the rib below the threads as demonstrated, you are not leaving 1" headspace. The rib is at 3/4" from the lip of the jar. May cause unwanted siphoning.
