Greek-American from Iowa, here--the first recipe sounds a lot like the beloved Greek dish "pastitsio," with the difference that the bechamel is quite a bit thicker and is enriched with both grated cheese and egg. The cheese used isn't cheddar but kefalotiri, a sheep's milk cheese similar to pecorino. Also, there's a touch of cinnamon in the meat sauce. The pasta--mixed with a cup or so of bexhamel--goes on the bottom, then the meat sauce, then the rest of the bechamel, which bakes up into a custardy top layer. It is THE Greek-American party dish.
