Hi. I'm 69 years old, living in the south of Spain. I gave up all flour - bread, cakes, biscuits, etc - about 6 months ago and replaced bread with home-made lentil bread and chickpea flour tortillas. Both are very easy to make but I prefer the lentil bread. I was suffering a lot from the discomfort of bloating. The bloating disappeared within a week. Completely. I have since lost about 10 Kg in weight and fell much better. This works!

Tip. Clip the parchment paper to the tin with clothes pegs and remove before putting in the oven.

thanks for sharing! both very good and easy recipes. for the bread - do you have an idea what I can use instead of psyllium? they really give an unpleasant texture. for the "tortilla" - we eat it with cream instead of tomato sauce. and we all like it because it's very versatile! I can prepare it for dinner every day of the week, and still not repeat same taste

Great. I often put a handful of lentils into my sourdough. Gives it a nice crunch. Though will try this, perhaps with sourdough yeast. (Baking powder = scone. Yeast = bread?)
