Thank you for the education about dry ice. I have always used ice packs in my insulated boxes. I live in Texas so we have to keep our cakes cool! Side note... I know where Muscatine, Iowa is! We lived in Moline, Illinois, for 7 years and in Fort Madison, Iowa, for three years. We did all our shopping in Davenport. :)

@@sophisticakesbymary My husband was a pastor. We loved living in Moline. We loved going to Davenport and driving along the river. We had friends with a small yacht and they would take us for day trips on the river. My husband died a few years ago. Now that I don't have the responsibilities of being a pastor's wife, I have started making some cakes again. Thank you for all your tutorials. I learned to make cakes from the Wilton books. There was no one to ask for help before Facebook and KZbin. :) Now the styles have changed so much and I am having to learn so many new things.

Very informative video!!! I would really like a video on how you make the delivery boxes. Where do your purchase dry ice? and do you use dry ice when delivering a fondant-covered cake? Also, do you remember how large it cake was (size of pan and number of cake layers for each tier)? Thank you in advance for answering my questions.

Thank you!! I may be needing to make more boxes soon as wedding season ramps up;) I buy my dry ice at a local grocery store. I am not sure if they all sell it. But I go to Hyvee. I use it for all cakes including fondant. The thing with dry ice is that it does not add moisture to the surface like regular ice does. You still may get some condensation once they come to room temp, but not like it would with normal ice. I believe this was a 6, 8, 9 and 10" cake. And all the tiers besides the small 9" were 3 layers of cake. The 9" was just one layer.

That was a great vlog with a lot of useful information. I guess I'm old fashioned because I still love the idea of borders around the cake and cascading flowers all the way down. 😆lol. Love all your videos! They are so helpful! I'm doing a tiered cake in a few weeks and one of the tiers contains fresh raspberries. I have alwasy heard that you should not leave cakes with fresh fruit out for more than 30 mins. I'm wondering how you would time this, especially given what you said about delivering 2 hours before so the cake is not cold. Would it be bad if I let the bottom tiers sit out when delivered then then added the chilled top tier with the fruit at the last minute? (I will be staying at the party.)

That should be fine;) I do deliver my cakes chilled. So that helps.

Did you brake the dry ice? I use dry ice in my Innovative Sugar Works Cake Porter but I only find dry ice in really large blocks it still works for me but I always want to brake it smaller but I saw it says not to brake it I don’t know 😊 just curious what you do. I also have a cake delivery kit I take when I deliver for weddings (has some extra clean gloves, piping bag, scissors, a few pieces of cut up box’s so if I need to level a wobbly table, some band-ads, some extra buttercream in a piping bag just in case……..)

Hi! I line a Tupperware container with a towel and plave them on that making sure they don't touch;) you can put paper towel in between them for extra protection too.
