Someone probably answered this already, but cheese curds aren't necessarily fried, though deep-fried cheese curds are a thing. It's the solid product of a milk-curdling process, the liquid product being whey. It's actually just an early step of cheesemaking process, but the curds have been drained of whey and cut into cubes rather than going through the further cheesely processes. :)
