Vijayalaxmi Iyer In our family we always buy butterly Brand!! It's so nice!! There are 2 grinders on the same model, one having both the features of making chappathi maavu and idli maavu, another only idli maavu. It's your own preference, both are excellent. If you buy that chappathi maavu option is so nice, one of my friends are using that chappathi maavu is so nice and making chappathi with this maavu ,comes out so nicely. The option lies in your hands to select which one is suitable for you!!

Vannakam Amma, I don't understand Tamil very well, but I think this Amma said the correct ratio was four parts idli rice, one part white rice and one part ulundu. I want to make idli tonight so I hope I understood it right. Was that fenugreek seed or coriander seed which was added? I know fenugreek is traditional, but the seeds looked like coriander to me.

Some observations:- (a) 5 measures of rice to 1 measure of udid dal is bit too much. Ideally, it is 3 :1. This guarantees super soft sponge like idlis. (b) Grind the udid dal with minimum quantity of water. It must be ground really fine, to achieve the best results. Time for grinding is not important. Grind udid till the whole batter in the grinder is aerated, and fluffy.

+Mahadevan Parameswaran 5:1 provides soft idli, adding more of urad dhall to rice is very bad for health!! Try this out will be so nice or try using your techniques
