When you include us by using “we” in your decision making, it feels soooo good. My husband says “are you watching Becky? What did you do with her today?”…. Lol. I just called to see if our local farmer is allowing the seniors in our area to pick tomatoes at half price a bushel! One more week! I see tomato paste in our future….. haha.

That’s awesome that they give seniors a discount! I’ll have to check my farms, and see what age they consider senior.

Just a hint on the eggs: when they go on sale, I buy a few dozen extra. Then using silicon muffin tins, sep. whites from yolks, freezing a muffin pan of just yolks and a muffin pan of just whites. Store in silicone bags in the freezer. Recipe calls for yolks - just grab a few from the freezer. Huge time saver!

If you freeze dry your tomato sauce and then powder it, you have instant tomato paste that is delicious! Just add enough water to your powder to get the thickness you need. Quick, easy, no fuss.

Hi Becky I meant to tell about my pasta pan with strainer when you were peeling your tomatoes.. I looked on Amazon and could only find a 12 quart one but I think they come larger. It is made of stainless steel. It has a basket inside that you lift out when your pasta is done. All of the water drains off. I thought it would be great for blanching tomatoes, peaches, beets etc. Fill the outer pot with water, bring to a boil. Fill the drainer with your produce and dunk it in the boiling water. Boil for the appropriate time and lift them out. No getting burned while putting the produce in and no over cooking trying to get them all out. It is also great for steaming crab legs.

Hi Becky!!! A couple of recommendations from a cottage baker: when releasing a Bundt cake, if it won’t release with the flour/buttered pan, try a plastic fork, it’s flexible and can get into the ridges easier. Also, if your cake pan is smaller, fuller than it should be? Turn your oven down 25-50F and add time onto your timer, approx 10-20 mins longer. Happy Baking!!!!

When making tomato paste this year I put my tomatoes in my steam juicer. I discarded the clear juice from the tomatoes ( I am sure you could think of a use for it 😊) then ran the steamed tomatoes through my food mill. It was then much easier to cook down into paste. This was just the way I found easiest for me. Love your videos!! ❤

I love shakshuka and we have it for dinner at least a couple times a month. Sometimes I'll keep it vegetarian, but if we're really hungry I like adding sausage (either bulk or thinly sliced hard sausages) - especially spicy sausages. It's also really good with roasted sweet potato and/or adding kale or other greens to the tomatoes! Edited to add: Also, shakshuka reheats wonderfully well.

Shakshuka is such a wonderful comfort food! We like to top it with feta cheese. The saltiness of the feta just adds so much to the dish. Now that I’m vegan, I’m trying to perfect a “tofu egg” to cook on top. Plus use a vegan feta. Not the same as the original but eating plant based has helped with health issues. Fun story. My daughter was in Israel visiting friends. They were traveling to another city and they stopped at a rest side picnic area. The people she was with whipped out frying pans and all the ingredients for Shakshuka … just like we would pull out hamburgers and hot dogs to cook on the grill.

You make us feel so much like we are there with you that when I saw the plums stuck to the bottom of the cookie sheet I said, Becky there's plums on the bottom of that pan! 🤣 I wouldn't call it vanity to want the dead stuff out of your garden. You have a gorgeous garden so of course you want the green to shine, so I would pull all the dead stuff out also. I love watching you can and make things for dinner at the same time. I'm 70 and live in a small apartment so I can't do those things anymore. So it gives me great joy to be a part of your community and feel included in all the projects you have going on... and there are Soooooo many!!! 😀 God Bless you Becky and all that you do. 💕💕

The other thing you can do to enhance the chocolate flavor (instead of or in addition to the cinnamon) is a tsp or so of instant coffee/espresso powder. This is the "secret" ingredient in my brownies! You won't taste coffee (my youngest son hates coffee but loves my brownies) it just makes the chocolate taste "chocolat-ier"

When I make my chocolate icing for my chocolate cake, I put coffee in it with powered sugar & butter. It tastes so good! Becky, you are a super woman to do all you do! I wanted to tell you about the plums on the bottom of the first pan. To bad the dogs got some all over. But that's things you can't always control! I don't think even as young as you are, than I could do all you do. I did have 4 kids, they're within 5 1/2yrs. I was 22yrs first baby & 27yrs last baby. So I was a busy Mom for those yrs. Then, when my last baby was 4yrs I decided to go to work, just part time. We kind of needed the money & I needed a break for a few hours. It really helped me & the kids. To be apart for a little bit. I was a CNA for 10yrs & later I went back to my training from Cosmetology, went back to school, got in the practice, & went to JC Penny's for another 12yrs. As a Hairstylist. Then I wore my body out & had to stay home for my health! But Becky, please do take care of yourself. I know you don't think about slowing down alittle when you're young. But you should some. My neice, didn't take care of her younger self. Later, she tried but just to late. She was a deaf mute teacher & loved her kids! She would start in the morning with a cane & walking then by noon had to go to her wheelchair, & later drove home. She had a terrible headache & died at 52yrs. I miss her very much! Thanks for sharing!!!♥️ ☺️🫂🍄🌞🦩🐦🦋🌹🍅🌶🫐🥒🧅

You can spray your pan with oil then use granulated sugar to coat the pan instead of flour. The sugar melts into the cake and that will prevent the white spots from the flour.

A cool hack that I use for tomato paste is to cook them down and then freeze dry the “sauce” and turn into a powder. I use the powder in place of paste when needed so this way you aren’t wasting a small can of paste or needing to find other things to use it up, or freeze unused paste left over. You just toss it in the recipe or you can reconstitute it with a lot less water until it is the consistency you want and then use it in your recipe.

I make zucchini brownies similar to your cake. I also omit the chips as I don’t like them in chocolate desserts. I do keep espresso powder on hand since it enhances the flavor so beautifully 😊. The brownies take up 3 cups of zucchini so it’s a win in this bumper crop year! The batter is very dry until you let it sit for 5+ minutes. They taste much better the day after baking. Yum!

I love the quiet, almost ASMR-like clips in your kitchen. So homey.

I absolutely love your channel and I’m living vicariously through you. Recently moved to New York from Arizona and the growing season is new to me. No garden this year but you have shown me options of how to still provide food for my family. Thank you for being you! Thank you for all the tips and for letting me into your kitchen. I feel like I’m meeting a friend for coffee !

You could save the seed's and donate to a seed bank in your area or just give them away. Seed's equal food for some people. I have found that seed's saved from your home garden become more acclimated to your area and grow better year after year. Thank you for the wonderful ideas about how to use all the tomatoes we're getting in. Have a wonderful day.

Tried the tomato paste recipe, my Roma's seemed to have more seeds and next time I will strain through a sieve. But, I will do it again. Roasting pan cleaned up beautiful with very hot water. My GE stove has a griddle burner and that worked really well with the roaster pan. Thanks for all the wonderful ideas, can't wait for the next videos to come out.

Becky my Italian mom made us a similar poached egg dish. She used her marinara sauce and poached the eggs in it. It was typically a Friday or Lenten meal that we always loved. Your version had my mouth watering and with your artisan loaf (that I have made many times) it was just so yummy looking! You’re doing an amazing job! So enjoying watching you harvest and preserve! Thank you!
