How about my easy snapper recipe with lemon and chilli sauce? It is one of the tastiest recipes for baked snapper and can be cooked in a BBQ or oven. I’m calling this an Australian, Thai fusion recipe.
By following my quick and easy snapper recipe for baked snapper. It's so simple, it's almost embarrassing! You know the saying 'easy as pie'? Well, this is even easier than that.
I love cooking with my pellet smoker because it means I can get really fresh flavours without having to go through all of the effort of grilling or frying them in oil. You just put your fish on some foil to save on clean up time and you are done.

Ingredients:
1 x 5kg (11lbs) snapper
Seasoning Ingredients:
2 tablespoons of olive oil
2 teaspoons of kosher salt
1 teaspoon of white pepper
1 teaspoon of garlic powder
1 teaspoon of dried oregano
2 teaspoons of sweet paprika
Cavity Ingredients:
100 grams of unsalted butter
2 sprigs of fresh thyme
1 lemon sliced up
Vegetables:
1 green capsicum sliced
1 red capsicum sliced
1 brown onion sliced
1 bunch of spring onions
500 grams of cherry tomatoes
2 tablespoons of olive oil
½ teaspoons of kosher salt
¼ teaspoon of black pepper
Lemon and chilli sauce Ingredients:
2 tablespoons of olive oil
150 grams of unsalted butter
1 brown onion finely chopped
1 lemon - zest and juice
½ teaspoon of red chilli flakes
4 cloves of garlic finely chopped
¼ cup of freshly chopped parsley
4 spring onions finely chopped
10 grams of fresh chives chopped
½ teaspoon of kosher salt
¼ teaspoon of black pepper
