We also have a 'vegetarian' version of the stuffed spleen 😜, with rice and vegetables, and it's as equally as delicious as the one stuffed with minced meat, or heart/kidney. The succes is dependable on great seasoning, and cooking it just enough so it doesn't dry. I think it's because of how many undiagnosed MSG allergies there are in the European-American, and Native-American (Landlocked tribes) communities. It's hard not to believe fear mongering when you yourself have a bad reaction to MSG. My suspicion is that communities that don't eat seaweed as part of their natural diet are more likely to be allergic to a highly synthesized version. Similar to how people who don't regularly eat dairy are more likely to have a severe reaction to even tiny amounts of whey protein. They really need to conduct an allergy study comparing the rates of seaweed eating populace to non-seaweed eaters and check the allergy rate. I think it would be interesting.
