My husband and I highly appreciate that you’re cooking in an average American style kitchen. I’m tired of high end appliances, huge counter spaces, and fridges the size of rocket ships. Your videos make me feel empowered to cook simple things while also not making me feel like I’m poor and pathetic with my dinky kitchen. I think cooking shows/videos are getting very eclectic with their fancy settings where most of us are making just above minimum wage living in simple apartments and just want to cook delicious, cheap, and healthy.

Or even adjust her budget for the high cost of living in NYC. The one episode I watched she bought eggs for almost $4.50 a dozen!!! They are around $1.20 a dozen here near Pittsburgh at the store. I only pay $3/dozen from the local organic farms even

You are not alone! Nobody likes turkey- because it gets too dry unless you baste it constantly. That’s why almost everyone on the west coast brines and deep fries it these days- usually outside. I’m going to try the instant pot this year.

My Polish immigrant grandmother taught me how to make anything from whatever she had. She fed a family of 9 through the Depression. My wasband used to say, "This is delicious. Let's have it again." I'd laugh. I didn't follow recipes, but used them as idea starters. "You can never step into the same river twice," I'd say. That's why he became my wasband.

Love love love seeing someone doing some real cooking with real ingredients and putting their own spin on it. This, to me, is what being a good cook is all about -- take what you have, think outside the box, make something more delicious than it would have been if you had an unlimited budget! It truly incorporates the real meaning of Thanksgiving also, to be thankful for what you have.

Crazy but the savory pumpkin pie you did, is actually eaten a lot in France. It is called "quiche au potimarron" or quiche au potiron and it normally has pumpkin, cream, eggs, onions and some type of cheese to gratin. It is delicious!

So a squash/pumpkin quiche? I don't think I've ever seen that version before, how interesting! I'm guessing the texture is probably thicker than a regular (as in plain, Lorraine, mushrooms or broccoli, etc) quiche then, since the squash is pureed?

"Senior Food Producer" is literally the first line in the video description (probably because there's always a ton of these comments on every one of her videos now, because of BA...). That generally means you've gotten a few raises. Last year she was listed as kitchen manager in some of her videos, which would also not have been entry level pay. (AFAIK Sohla was being paid for an entry level non-video job at BA.)

When you cut into the potato, you damage the cell walls that keep everything nice and tidy. The phenols and the enzymes meet the oxygen coming in from the outside world, causing a chemical reaction to take place. This chemical reaction results in - you guessed it - pink potatoes.

Yeah, but she did say that. Her question was why does it turn red when it oxidizes. Oxidation she got. The question was why red. (Rust, oxidation of iron, is also red. )

it looks like she went to a few different supermarkets and potentially shopped sales to get the most from her budget! a lot of the dollar items look like theyre from chinese supermarkets and the Urban Meadow half&half and butter (?) are Key Foods store brands that go on sale at those prices every few weeks

Potato cells contain these compounds called phenols, which are surrounded by enzymes, which are all bundled up nice and safely inside the rigid cell walls. When those cell walls are destroyed and get exposed to oxygen, they begin to turn pink. So when you grate the potatoes, it breaks those phenols quickly, trapping pockets of air, so as the potatoes begin to react with the oxygen, it turns the water red. (I totally googled this)

I'm originally from New Brunswick Canada but live in the US. We are Acadian descendants and have very strange recipes. My mom used to make this amazing stuffing with potatoes onions summer savory and cubes bread. She would save all the heels of the breads and would stuff that sucker up and close it with one heel of the loaf. It was not a big hit here in NC when I brought stuffing from Canada. But boy oh boy my sister and I reminisce while eating mom's recipe. Missing you mom. Happy Thanksgiving sweetie .

Everytime I turn on Food Network it is either Diners and Dives or a challenge show, no real cooking, so I pass on. There is a side channel for PBS called Create, that has some actual cooking shows, June is so funny and so talented.

@@alcogito8287 The Food Network seems to be all about fast fast fast challenge cooking , and one of the most special things about June's cooking is that she takes her time. Plus I doubt she'd ever become a sell-out for $$ of fame. I would imagine that would involve giving up too much creative control, which is what makes her so special!
