Would you like doing the following? You may even stay dry ;-): Make a few nozzles like from 3 to 5 mm with 0,5 or 0,25mm steps. Measure the pressure, flowrate of each and how far the water will splash from the nozzle (horizontal). From there you can estimate or maybe calculate, where the maximum theoretical power is (like with a solarcell - voltage vs. currrent), without bringing other errors in, like you may have in this video. Furthermore then you can test different nozzle designs (inside coating or whatever). From there you will see if it makes it better or worse.

I was thinking maybe you can get a tool to measure the best angle you place the nozzle facing the spools and get the highest voltage out of the generator for your next turbine design?
