Grace HELLO regarding the OVEN my family used to have the same oven and it was somewhat temperamental also, but we ordered a new seal for the oven door, the rubber seal thing, and it worked a whole lot better!!!

Grace I've had afternoon tea in a host of places, not in England but still super nice hotels and tea rooms around the united states and including NYC. You did excellent and the whole presentation looked great. One thing for the sweets and Sammies is you can cut SOME into tiny triangles like the brownies. You can serve tiny sticky things like the cake in fancy cupcake cases or similar especially per the season (idea not really happening in most place), and add some herbs to tops of open faced things like dill sprigs. The overall presentation though was great. The other thing for tables is cups upside down sometimes on saucers (showing they are clean)? and for tea, have them choose their tea, give them their own small or medium teapot, prep the pot with hot water and then provide them with the loose leaf tea added to their pot, a little sand personal hour glass timer that you turn over to say the tea is steeped when the timer is done. lol. Then they can pour their own tea over a tea strainer over their cup. Provide a small tiny plate to put the tea strainer on after removing it and tiny tea spoons. One thing I loved at one place for Christmas tea was that they had red and white large sugar crystals. I'll send you a link to one of my fave tea places here. They are currently sadly closed due to covid but have excellent holiday and normal menus/ideas. Check out their menu and gifts, etc. queenmarytea.com. The eclairs looked great, the various sweet treats AND the savories looked well made and presented. Good job and super sweet that you did it for your sister and her boyfriend as well. :)

Eclairs in France are a bit different than in the UK. They actually have flavoured pastry cream inside - the classics that you can find in patisseries are chocolate or coffee eclairs. Coming from France, I never really understood why they just have cream here in the UK. You should give it a try 🙂
