This is probably one of my top two favorite cooking channels (you two just do different things). It's approachable, you explain things in an entertaining and easy to understand manner, and it makes me want to get better at cooking. It's like... not memorizing recipes... it's more like getting a feel for how to cook in a fun/artsy but not in a bad way kind of deal. I know that probably doesn't mean anything but thank you. You making cooking fun and tasty.

What a fantastic burger! Since you love caramelized onions, another French dish I recommend is the "pissaladière". Think of it as a caramalized onion sauce pizza loaded with olives and anchovies.

so when I'm caramelizing onions I treat it similarly as I would rice. I blast them on high heat to evaporate most of the moisture, throw a lid on, drop all the way down to lowest heat, then let it sit for about forty-five minutes to an hour. works for me every time and it turns what's normally a very active process into a mostly passive one.
@sjenkins1057 Жыл бұрын
You can do the final caramelization in the oven as well, for less risk of burning while still being very hands off.

Another tip when speeding up the caramelisation prossess is adding salt. It helps draw out the moisture quicker, and break down the onions. It also helps balancing the sweetnes. Ofc, if you are gonna add stock afterwards, make sure it's not too salty 🙂

If you want to move the onions along a lot faster, try microwaving them , covered, for 4 or so minutes first before purporting them into the pan, it really helps move them into the caramelizing stage faster.
