Hello everyone!
This year so far the amount of Choko we got at home is mind blowing, its like it grows overnight and we already got more then 3 buckets from a single vine.
So much Choko I hardly know what to do with them apart from giving them away and for that reason today I have decided to make something out of the ordinary and make some choko cake.
Here is the ingredients and recipe
1 large choko
2 eggs
1 cup of sugar
50ml of oil
2 cups of flour
50 grams of dried coconut
1 Tbsp of baking powder
Method:
Peel and grate the choko, you will need 3 cups in total.
Transfer to a blender with the eggs, oil and sugar. Blend until smooth.
In a separate bowl combine flour and coconut.
Add in the choko smoothy and mix well until free of any flour lumps.
Gently mixing in the baking powder.
Transfer to a cake mold lined or floured and bake at 180C / 356F for about 35-40 minutes.
One extra thing you can do to bring more life to this cake its a lemon sugar syrup.
