It's not UTTappam, it's UTHappam, uth like the uth in south. Milagai podi just means chilli powder, not the same as gun powder aka idli podi (milagai podi can be used as well, but it would be confusing). The pronunciation of milagai podi was perfect though.

I asked a chinese person what their given name was not the english one and they got frustrated I didn't catch it on the first try. Can buy Idli rice ( a type of rice), urad dhal, poha(which is flattened rice, something like corn flakes) fenugreek seeds in Indian stores. Soak it all, blend, ferment then make like pancakes. The measurement he does not tell. Usually its one cup idli rice, half cup urad dhal, a handful poha and one or two teaspoon fenugreek seeds. this is great breakfast with natural probiotic.

Using hand is authentic for fermentation. Over night soaking and grinding in wet stone grinder makes wonders. Avoid blenders.

If you don't have much time , you can make it from Samolina instantly. Just make a paste of samolina + Indian yogurt and let it rest for 5-10 minutes. Then you can mix salt to the batter and make it like the regular uttpam
