I Made Kimchi for the Winter with My Boyfriend’s Family 🇰🇷 ‘Gimjang’ in Korea

I’ve made kimchi a few times in the past as I love learning about Korean cooking and food however this is the first time I’ve made this much in one go! My boyfriend and I went to his families house to help with ‘gimjang’ which is making kimchi for the winter. His grandma give us a lot of tips along the way and his aunty made the most amazing bossam which is a Korean build pork dish.

@@hojusara His mother has some secret ingredients! Also mix the paste up in a different container too, not directly in it. I think Hugh never did it as a kid and then wasn't really living at home for years until we went to the countryside.

Still grieving just like the rest of Sara's fans/follower but I will continue to remember her smile and all the happy memories she and Hyun shared in this channel. They are my happy pill and even before she got sick, I even discussed it with fiancé that would it be okay to name one of our babies in the future as Sara and he gladly said YES! Watching you two make kimchi with Tiny's family reminds me of making tamales with my family. I'm Mexican American, and in early winter every year, my family and I make tamales for Christmas Day. It's takes the whole day and we make SO MUCH. One year we made 35 dozen! It's interesting that with different cultures there are similarities, like preparing food with the family. Awesome video!

어렸을 때 어르들이 김장 자식들한테 챙겨주는 거 보면서 좀 더 맛있는거 주지... 이런 생각을 했었는데 커서 보니 이 김장이란게 너무나 소중한 음식이더군요 한국에서도 그냥 김치 싫어하거나 잘 안먹는 사람 제법 있습니다 하지만 김치란게 볶아먺고 쪄먹고 부쳐먹고 구워먹고 전골 찌개 국 비빔밥이나 면 종류 토핑까지 정말 김치냉장고 한 가득있으면 그렇게 든든할 수가 없어요 고기 좀 있고 김치 있다 그럼 뭐 끝이죠 ㅎㅎ 말이 길었습니다 코로나로 인해 안그래도 힘든 겨울인데 좋은 남친 만나서 시끌벅적 잘 지내시는 거 보니 참 보기 좋습니다 호주에 계신 부모님도 영상 보면서 든든하실거 같아요 영상은 이제 보러갑니다 ㅎㅎㅎㅎ

👏👏👏😍💖💕👍👍 예전(1990년대까지만 해도) 한국의 겨울철 초입에는 '김장'으로 집집마다 행사를 치뤘죠. 적게는 30~40포기에서 많게는 200~300포기까지도 했었죠. 게다가, 배추포기김치 말고도 나박김치(물김치), 동치미, 백김치, 보쌈김치 등등 여러가지를 한꺼번에 다했어요. 그 당시 할머님/어머님께서는 정말 말로 다 할 수 없을 만큼 고생하셨죠. 김장 김치 / 부엌일들을 한 번 해보면 밥상에 올라온 반찬들 부모님의 노고를 알게 됩니다. 밥알 하나에도 감사하죠. 저희 집안은 그 당시에도 할머님의 진두 지휘하에 남자들도 전부 동원되서 김장 같이하고, 땅파고 김장 독도 묻고... 추억이네요

식당에 나오는 김치와 마트에서 파는거랑 집에서 만들어 먹는거는 천지 차이죠. 왜냐하면 들어가는 재료가 차이가 많이남. 김치도 어떻게 보면 재료빨임. 얼마나 고급 ..비싼 재료를 많이 넣느냐에 따라서 맛이 차이가 많이남. 그런데 마트나 파는 김치는 당연히 기본적인 고추가루나 마늘 액젖 등 기본적인거 몇가지만 들어감. 공장형 김치에서 무우 배 새우젖 매실 등등 다 넣어면 마진이 없죠. 남는게 없는데 넣겠나요? 만일 넣는다면 엄청나게 비싸게 사먹어야 할듯.. 집에서 해먹는건 가족들 건강을위해 맛을 위해.. 좋은 재료를 아끼지 않고 넣으니 당연히 맛있을수 밖에요

Keep simple. Do not add too many ingredients, they tend to impede fermentation. Key is adding salt and let cabbages sweat and become flexible enough. Next is coat cabbage surface with enough thick porridge to help keep off oxygen. It is better to make sure gimchi juice to completely immerse the cabbage. The sweat from cabbage will do it within a day or two if your recipe was good. Finally, seal the container from oxygen, and do not beark the seal until it is ripe (keep oxygen away!). Finally, most important, KEEP OXYGEN OUT!

할머니와 어머님은 양념 버무린 김장배추 김치통에 칼질한 부분 위로 오게 제대로 넣는것 같은데‥ 사라님이 양념 버무린 김장배추 칼질한 부분 아래로 향하게 김치통에 넣은 것 같습니다. ‥ 양념 묻힌 김장 배추 통에 넣어 보관할 때, 칼질하여 자른 부분을 아래로 엎어놓는 것이 아니라 위로 향하게 눕혀놓아야 합니다‥ 왜냐하면 칼질한 부분 위로 향하게 눕혀 놓으면 김장배추에서 물이 나오며 양념도 같이 빠져나오지만 모두 김장 배추 안에 있게 되지만, 반면에 칼질한 부분 아래로 향하게 엎어 놓으면 김장배추에서 물이 나오며 양념도 같이 김장배추 밖으로 빠져나와 모두 아래로 흘러내리기 때문입니다. ‥ 김장 담그며 가족분들의 사랑 받는 사라님 보니 보기 좋네요.
