During quarantine, I was lost, tired, alone, and doubtful of how I was living my life. I felt burnt out everyday, and made my family worry. Heck I was only a junior at that time, but I felt the whole world riding on my shoulders if I wasn't able to choose and pass into a dream college, a passion to study, and a job to scour after all that. I always burnt myself out after doing homework and assignments, I wasn't learning properly, and it felt like my online peers were way ahead of me. I stumbled upon one of your videos, something about making Disney-Pixar food, and I must say, the amount of comfort and relaxation that dawned on me made me so happy. I love your videos! Keep up the good work!! You inspire more people you don't think you have!

Turns out that dalgona is just Korean for a simple brittle - caramelized sugar with baking soda added. You saw how the caramel puffed up? Dalgona coffee looks like that, so an actor called it 'Dalgona' after the candy.

I used to work at a place that makes mochi donuts! The donut is a made of a mix thats mostly comprised of tapioca starch and flour, sugar, no yeast (most likely baking powder). Then we add shortening, oil, eggs, and cold water

Ingredients ▢ 6 Tbsp unsalted butter ▢ 2 large eggs (50 g each w/o shell) (roughly 100 g) ▢ 1 cup whole milk (Heat to 110ºF or 43ºC - slightly warmer than body temperature; Use whole milk for the best result. I do not recommend low fat or skim milk.) ▢ 1 tsp instant yeast ▢ ¼ cup granulated sugar ▢ 1 tsp pure vanilla extract ▢ 2 ½ cups tapioca flour (2 ½ cups + 2.5 Tbsp to be precise; If you're using a cup measurement, please follow this method to measure. Otherwise, the amount of flour tends to be more than you need. 1 cup should be 120 g.) ▢ 1 ¼ cups all-purpose flour (plain flour) (1 ¼ cups + 1 Tbsp to be precise; If you're using a cup measurement, please follow this method to measure. Otherwise, the amount of flour tends to be more than you need. 1 cup should be 120 g.) ▢ ½ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) ▢ 4 cups safflower oil (for deep frying; See Notes for the amount of oil)

The recipe by Just One Cookbook has nailed it on the head, the donuts come out a wonder light brown and can be flattened with the roof of the mouth. The donuts harden, but do become softer once microwaved for 15 seconds. The donuts start very small, but absorb much of the oil and triple in size, so don't worry about the 5g measurement. A very wonderful recipe.
