I worked at Waffle House many moons ago and you are correct, all that season is was salt and pepper mixed up but customers always asked what we used and we'd tell them and they still not believe it.

I’m a Master Grill Op at Waffle House and it’s only salt, pepper & pork/mixed grease. Lol 💖💖 the cheesesteak only gets salt and pepper (the grill always has pork grease on it) a little secret. 😉
