When traveling on business, I had a bout of insomnia and decided to walk in an unfamiliar city. The only dining option open at the time was a Waffle House. There I saw a profound example of humanity. There was a waitress working the graveyard shift who had ability to provide childcare. She toiled away whilst here small child sat quietly in a corner booth with a coloring book. All the other employees took turns to look in on the her kid. Everyone working there was close. Her working a shift was either out of the need for a paycheck and/or deep sense of obligation to her colleagues. Regardless, it touch me deeply to see this little community of caring people. I tipped well and went back to my room and slept like a baby.

No matter what culture you belong to, sometimes you just can't beat good old cheap, inviting food like this. Here in America it's Waffle House, Soul Food, BBQ, or your favorite local diner. In Mexico it could be a tamale, street taco, or torta place. In an Asian country it could be a cheap dumpling or soup restaurant, etc., but there is always a wonderful, welcoming taste that appeals to just about everyone.

I sit down and a glass of coke is there immediately. They make conversation, we shoot the shit, and the chef makes a bacon hashbrown bowl with pickles tossed on top. Then I sit there for an hour decompressing and vibing. Another person told the waitress to watch out cuz "That guy looks and sounds like Ted Bundy motherfucker" and she simply said "I know!" With a grin and a wink. Waffle House is eternal, and even when humans go interstellar you can bet that on every space station there will be a waffle house.

Two of my favorite chefs. I like Sean Brock, I like his understanding of, historical and cultural, and respect of Low Country cuisine, from a place my father grew up. I was gifted the opportunity to dine at Husk a few years ago for my birthday, wonderful present from the wife. I love Anthony Bourdain. He is a poet and spoke meaning into the sometimes meaningless places of a kitchen. The dishwashers, the line cooks, burning yourself, getting yelled at, your legs hurts, your arms hurt, you do too many drugs after work, you drink too much to wash it away with your proverbial fellow comrades in arms, you live another day to tell the tales. Contemplative, world-weary in his later days. Came so far from where he started, always learning. Troubled. His sudden death, without explanation from him, I still haven't gotten over it. He was a celebrity who didn't want to be one. He enjoyed the simple but good, the warmth of dishes best made by someone's grandmother. I don't think there will be another Bourdain, they don't make those anymore.

What’s awesome about Bourdain was how he appreciated food for how human of a thing it is, not for any of the restaurant’s ratings or nebulous signifiers like “authentic”. I lived in Charleston in the early 2000’s for about 3ish years. We ALWAYS ended up at that exact Waffle House ( over the bridge on 17) sitting in those EXACT little bar seats. It was the only place we could always go late night, there was always police outside, and it was never an issue. Ever. Literally a saving grace for so many of us late nighters. Once I got dosed at a party and we fled to WH. We were accepted, fed, and made it home. So damn cool to see Chef take AB there on his CHS trip. For all of us that know, really know how significant this simple establishment is to this very special community.

Which translates as hash browned potatoes scattered on a griddle and fried with pieces of onions, chunks of ham and covered with a slice of American Cheese. I always got an order of hashbrowns scattered, chunked and diced. Which was scattered with chunks of ham and pieces of diced tomato. I had a friend who got their order double covered in the ring. Which meant he got two pieces of cheese and had his potato pieces fried in a clump like a potato cake instead of scattered across the grill. You can also get them CAPPED with mushrooms, TOPPED with chili and Pepped with pickled jalapeno pieces, and Country with sausage gravy. And any mix and match combination you can dream up. Want a double or triple sized order? One two or three slices of cheese? All the way? At one time the menu said there were several hundred thousand variations on the way they could make hashbrowns. I've never done the math but the permutations are pretty lengthy.

The thing I like about Waffle House is there’s no judgment. My friends and I stopped by Waffle House coming back from a competition and we were in sports coat, slacks and dress shirts. We walked and and took a seat and it was almost empty and the waitress says where we were looking like a million bucks and we explained our competition. She asked us if we won and unfortunately we got 3rd place but she still gave us all a free waffle of our choice. A homeless man who has nothing but a tank top and shorts on and the president of the US can walk in their and still receive the same hospitality

I once spent Xmas Eve in a Waffle House. I was not alone. There is a strange turn of customers on a Saturday night. Workers late in the day. Party goers as the bars close. Then there is a pause for about two hours and they clean furiously. Then the Sunday morning church crowd comes in with their Sunday Best on. It's wild.

His shows were always on as soon as I got home from middle school, No Reservations, and Parts Unknown were always my go to shows. Lived in Georgia for almost 4 years during my time in the military. Back in California now. Two things I miss the most from back there are the gas prices and Waffle House. Place was always there for me if I was starving at 2am with nothing to eat in the fridge.

Ahhhh, grew up 3 blocks from this WH. 30 years ago hung out here with Brad, John, Chris, Richie, Billy and Rhonda....Our friend was the chef and ruined meals on purpose so he could give them to us. I just found a notebook belonging to RI that has our songwriting attempts and hand drawn band logos in it. Careless days....

To give you an idea about how iconic Waffle House is, they finally had to start selling their coffee mugs because so many people were stealing them from their locations. People talk about the obsession with In-N-Out, Waffle House inspires similar feelings. I know people that live where there isn't a Waffle House that if they are traveling anywhere near one, they'll go out of their way to go to it. I have some friends in California that usually head East once a year to visit family in Kentucky and most of their meals are at Waffle House. I have some Canadian friends that traveled to Myrtle Beach several years ago and ate at least one meal a day at Waffle House. If I were to move from the South, I would have to say that other than my local craft breweries, the only thing I would truly miss would be Waffle House (assuming I moved to a part of the country in which the chain does not have locations).

I grew up in Washington DC. There is not many around here. About 4 in a 55 mile radius. When I moved to Colorado. There was tons! I ate at one almost every night when I lived alone. Most of my mugs in my cabinets are waffle House mugs.

My grandmother still laughs about me proclaiming Waffle House to be the best food I've ever tasted, with much emotion, as a kid. It was Christmas, no where else was open and we'd been driving for hours looking for a place.

Eating in a Waffle House Christmas Day is almost a tradition. The place is usually packed to the walls with people all day. Whether it's somebody that wants an early morning breakfast before the big meal latter or somebody who wants a light night meal not made out of leftovers or somebody who just didn't want to cook at all or even a person that has nobody to eat with.

First ever book i bought was year 2000, and it was kitchen confidential... i was mesmorized by it. Everywhere i travel, i do my regular "has Anthony Bourdain been there?"-- and i visit all those places. If its good for him, then its good for me. I have traced his steps in New York, Los Angeles, Rome, Sicily, London, Prague, Stockholm and Istanbul. He has given me such memories. He has shown me what to look for when traveling, what places to visit. I have went from goint to restaurants to searching out these lokal hole in the wall places in back alleys. I wont say "reast in peace" since he never rested, he had a mind that was constantly travelling. Mr Bourdain, thank you for the memories and food... hope to break bread with you where ever you are.

I had to watch this again. Anthony oh Anthony I miss you so. Eating at the Waffle House is a way of life in the south. I lived in Atlanta for a couple of years and I had my Saturday lunch there or at the Varsity. A patty melt with loaded hashbrowns and a coke. Thank you mam!

The beauty of Waffle House is that for a lot of the tables the waitstaff doesn’t even have to leave the kitchen/prep area to take your order. They even deliver your food over a short walk next to the table.
