Grease an 8x8 inch baking dish. In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Make a well in the middle of the dry ingredients and add in the vegetable oil, egg, and milk. Mix well with a wooden spoon until the batter is smooth and consistent. Pour the batter into the greased baking dish. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.

Fun fact: canned corn is already junky. Humans cant digest the kernels, even in all the bio engineering that got us from maize to corn (mostly not-techie engineering, but all cultivated plants are GMOs, which isnt bad). Canned corn is a high salt *starch* that does offer an aggressive amount of fiber, and all the vegetable properies are essentially gone... so it well deserves its new packaging! It IS a vegetable if eaten within 40 mins of picking & not over boiled, but we still cant digest it properly. I used to love it but my nutritionist mom treated corn like potato chips or tater tots in meal planning.
