Great content! Just btw - kontomire is actually coco yam leaves ( the greens for a starch grown in Ghana). Spinach is typical diasporan replacement in Kontomire stew but it’s not the same thing.

OMG I just googled what coco yam leaves are and here in the Philippines they're called dahon ng gabi (taro leaves) we usually dry them and cook it in coconut milk and coconut cream and it's one of my favorite dishes (we call it laing). I will definitely try out Kontomire stew. By the way I'm half Ghanaian and half Filipino and to learn that both cultures cook the similarl ingredient is so cool to me. And no spinach is no where near the taste of taro leaves.

Yo I love being black. My family is from Guyana. We does call bofro fry bakes! It's literally the same. There's also a dry version that doesn't use oil. So good!

my family is from somalia. we have the same thing. we call it buur. we fry it. we mostly eat it during Ramadan. it's a great way to break your fast, esp with dates

This was so good and educational! More videos need to put a spotlight on recipes from African cultures. I think the fact that there were so many ingredients most Americans have never heard of shows how important these kinds of videos are.

For the people that want to make the spinach stew, make sure you cook the egusi very well or you will be sitting on the toliet after u eat🤣🤣(note: you don’t have to add the egusi if you don’t want too)

The bofrot turned out good, I sensed it was runny. Mi y3 Ghana ni (Am a Ghanaian) Edit: the sauce that comes with the yam is called *meko* pronounced as 'm3-co' You did a great job 👍

Palm oil production is actually very unsustainable and leads to deforestation. People are beginning to stay away from palm oil or products containing palm oil unless it has been sourced ethically and sustainably.

@@kojo9228 palm oil has always been sustainable in local African communities, it becomes unsustainable when forests in Southeast Asia are cut down to make way for palm trees. The problem is not with palm oil, it’s the production in many SE Asian countries.

nkontomire is the leaf of the cocoyam plant, very similar to taro leaf, not spinach (though spinach is a decent substitute flavourwise)
