I feel like pickling avocado would go better with under-ripe avocados. When we made ceviche that included avocado, the acid broke the under-ripe slices down and made them fairly soft, if we'd started with super ripe ones they probably would've turned into complete mush.

that's a good shout, i think if i intended to store more than a few days, under-ripe would be best!
