시나몬 롤처럼 돌돌 말아 구웠는데 모양이 귀엽고 하나씩 뜯어 먹기 좋더라구요.
블루베리 퓌레 만들기가 번거로우시면 잼을 사용해 조금 더 편하게 만드셔도 좋을 것 같아요~
빵 반죽의 두께에 따라 폭신한 식감의 차이가 있어 더 폭신하게 드시고 싶으시면 반죽을 도톰하게 밀어 만드시면 된답니다~

300g 강력분

5g 소금
45g 녹인 무염버터
150g 블루베리 (간것)
60g 설탕
5g 레몬즙
30g 옥수수전분
100g 크림치즈
10g 슈가파우더
20g 블루베리퓌레
3g 바닐라익스트랙
5g 레몬즙
180g Warm milk
4g Dry yeast
300g Bread flour
20g Sugar
5g Salt
45g Melted unsalted butter
150g Blueberry (ground)
60g Sugar
5g Lemon juice
30g Cornstarch
100g Cream cheese
10g Powdered sugar
20g Blueberry puree
3g Vanilla extract
5g Lemon juice
[만드는 과정]
블루베리 퓌레
1. 블랜더로 곱게 간 블루베리에 설탕을 넣고 약불에서 끓여 주세요.
2. 많이 튀기 때문에 계속 저으면서 걸쭉해질 때까지 끓여 주세요.
3. 레몬즙을 넣고 조금 더 끓이고 불에서 내려 완전히 식혀 주세요.
빵 반죽
5. 따뜻한 우유(약 40도 정도)에 이스트를 넣고 섞어 주세요.
6. 강력분에 설탕과 소금을 넣고 섞은 다음 이스트를 섞은 우유를 부어 주세요.
7. 녹인 무염버터를 넣고 주걱으로 대충 섞은 다음 손으로 치대며 반죽합니다.
8. 약 10~15분 정도 반죽하고 비닐 랩을 씌워 크기가 2배 이상 부풀 때까지 발효합니다(약 1시간)
9. 식힌 퓌레에 옥수수 전분을 넣고 섞고 틀에는 버터를 발라 준비해주세요.
10. 밀가루를 뿌리고 반죽을 밀어 넓게 펴주세요.
11. 넓게 편 반죽 위에 퓌레를 고르게 발라 주세요.
12. 돌돌 말고 실을 이용해 양 끝을 제외하고 12조각으로 잘라 주세요.
13. 용기에 넣고 비닐 랩을 덮은 다음 반죽이 2배로 부풀 때까지 발효합니다.
14. 180도 오븐에서 20~25분 정도 구워 주세요(예열 200도)
블루베리 크림치즈
15. 크림치즈에 슈가파우더를 넣고 섞어 주세요.
16. 블루베리 퓌레와 바닐라 익스트랙, 레몬즙을 넣고 섞어 주세요.
17. 빵 위에 블루베리 크림치즈를 발라서 맛있게 드세요.

Very nice, thank you. The corn starch mixed with the blueberries didn't run all over the pan and the blueberry cream cheese lets everyone know what is inside. When I make cinnamon buns (rolls) I always roll the longer side up but rolling up from the shorter end does give a nice presentation and more snack size roll. Again, another great twist on a classic. Appreciate all you do for us.
