Fun fact: Green Grass Jelly is not your usual product of jelly, it doesn't contain any gelatin so it's vegan! Also the plant it is derived from is in the platostoma genus of the mint family, so technically it ain't grass. Edit: There is another plant that one of my fellow Viets in the comments, Minh Khuê Nguyễn, has pointed out that tiliacora triandra is also used to make grass jelly, but it also isn't a grass, it's more like vines with berries

Vietnamese here, the "green grass" flavor is poorly translated. 'Sương sâm' is just the name of a herb traditionally used to make jelly in our country (Tiliacora triandra if you want the scientific name). So yeah, just a herb with no actual common name in english. It should taste pretty bland, a little leafy at most, it is just a gelling agent after all, imagine how plain gelatin would taste. Edit: lets go most of the jelly is from vietnam

If you do buy some from a local market, just wash the leaves, put in a blender (blend lightly until small pulps remain) then only take the juice. It can now be used like gelatin mixture

The "Green Grass Jelly", also sometimes packaged as 'herbal jelly' is definitely an "acquired taste" type of thing. It also depends on which one you get. Some are VERY bitter while others are flavored (like lychee, etc) and sweeter so it's easier to eat. It's pretty popular for Asian cultures and they even use it in place of boba bubbles for bubble tea sometimes. They say there's plenty of health benefits to eating some. I can't stand the ones that use actual turtle in it tho.
