It's basically the same proteins, given that shellfish (well, crustaceans specifically) are arthropods, and all of them have the same basic proteins making up their chitin. Like the word vegetable, shellfish is a very broad term, just means any edible aquatic invertebrate with some sort of shell or exoskeleton, and what's considered a shellfish may vary locally. You could probably even classify aquatic insects as shellfish. As insects become more popular in western food, I'm almost certain that there will be similar pointless arguments to match ones like "whether a tomato is a fruit or a vegetable".

Got to jump in to say to Arin normalizing bugs is kind of dangerous for a lot of us with allergies. Around 10% of the world has a shellfish allergy. However, shellfish is not the right word, the correct term is Arthopod, bugs. Eating a cricket is as dangerous to a person with a shellfish/arthropod allergy as eating the same amount of lobster. There is already large issues with finding safe places to eat that also serve seafood due to cross contamination, and adding bugs to the menu will make it massively harder for 10% of the planet to get safe protein. Sadly, we also can't easily replace it with vegetable protein, as the amino acids we need are in far lower quantities in plants, which can still lead to malnutrition.

Tbf bugs are a great source of nutrition and are great for the environment in many ways. They take up little to no space and are very quick and easy to raise up and leave very little to no footprint. Also take little time to raise up to maturity to kill

I've eaten some of the bugs in this video. My least favorite part about my scorpion was that it was like trying to eat crab legs with the shell still on. My least favorite part about the tarantula was that everything was crunchy except the hard-ass abdomen. My least favorite part about the giant waterbug (which was my favorite of the bugs I got) was that it tasted like I ate dried beef along with a handful of dried-up leaves.
