Wonderful tip dredging the shrimp in cornstarch before pan-frying! The shells are part of the delicacy of the dish, and this makes them so crunchy even my more finicky friends enjoy them with no complaints about the shells-one didn’t even realize he was eating the shells until his second helping LOL Thanks for the recipe and the technique! I used to live there for a couple of years in the 90’s ... I love going there for lunch on a Sunday ... I used to order their half and half ... half scampi and half spicy ... gosh, I am making this asap!

I made this shrimp tonight, it was delicious. I did add some rice flour and a bit of salt to the corn starch, I also added a bit of mirin, sake and lemon juice to the garlic butter when cooking it at the end and it was amazing! Thank you!

Thanks for the recipe. Giovanni's is a MUST stop for us whenever we go to Oahu. We always get the scampi. International marketplace has changed a lot. When I first went there 10 years ago it was not a fancy mall.

Omg! My first trip to Oahu was in 2014 for Thanksgiving. The international market back then looked like a traditional flea market with character! My husband and I went this past Christmas; the market is now just a bunch of fancy stores! Touristy mess!

So I can finally comment in this. I’ve had this video tab up in my phone for …probably a year or two. The moment finally came last night where I actually committed to making this and yeah it was worth the wait. Really brought me back to having Giovanni’s on holidays! In future I’d probably not cook with shell on and reduce butter amount slightly but outside that it was delicious. Great video!

Giovanni's marinates the shrimp with the olive oil, butter, and other ingredients, then cooks as is. Your recipe looks good. I do basically the same but add some white wine in the marinade as well, and I don't use the corn starch (which looks like a good thing to try). Aloha!

OK here is a suggestion for those who never eat the shell and head of the shrimp. Get two separate batch of shrimp one with the shell and head and the other without. Cook them the same way then let me know which batch had more flavor.

It can take more effort than it's worth to peel garlic that way. I used to do that until I started smashing the cloves with a knife; the skin practically falls off the garlic after that. Coring each clove also helps.

“Alae” is pronounced “uh lie”. And your shrimp honestly looks better than Giovanni’s. But if you are ever back in kahuku, try the Famous Shrimp truck a few blocks away from Giovanni. Even better.
