You have a pretty cool setup I gotta say. I'm just getting serviceable with hand sharpening on diamond plates, so it's cool to see how other people choose to sharpen their knives. I love the look of that chefs knife. Very pretty blade.

lol...you certainly can;t touch this. I was wondering how many would even get that reference. The main thing is that I amuse myself...lol 50k subs feels like I'm in some kind of dream. The income from this channel is almost a full time wage now if the numbers keep up. Most is still coming in from that viral clip and who knows how long that's going to last but it's still bringing me in over 1.5 million views a day. I have played many roles in my life but speaking of guitar, one of them was I used to play bass in a heavy metal band in the 80s. Van Halen, Motley Crue, Judas Priest, Saxon...etc I run a headlight restoration business at the moment (did a wicked R34 show car, racer today). I used to coach options trading, was a motivational speaker and have written a book on wealth theory...and had at least 65 different jobs by 1995. I could tell some stories.

Hammer Stahl are upper tier home cooking knives built in TN USA. They do use an imported German steel which is the same steel many knife makers in Solingen Germany were using 20+ years ago. I have a German made Felix brand 10" cooks knife made of the same CrMo V15. It's got a Rockwell of around 56. They employ a unique 'quad tang' handle and come with a 20° grind. Certainly decent knives u might find in an upper tier homeware store but perhaps not in an industry cooking knife store. But you could definately use them in a professional setting. They don't have any safety bolster at the heel of the blade. I'm sure when sharp they would perform pretty well. While the scallops in the cheeks may aid in slicing, they are quite close to the edge so after years of sharpening u may be left with a serrated edge 😅 It may transform one day into a bread knife.

Well, my first thought about the grooves in the blade, I would have called them flutes, but that seems to apply more to raised than lowered coves. Still sounds better than coved.... I would also worry about eventually sharpening to the point where it turns into a serrated edge.

Fun fact: If you hear a German say "Das ist der Hammer!" they're talking about something that's either brilliant or absolutely dreadful, expressing their amazement or frustration about something that's completely unusual, unexpected - perhaps reflecting the way the tool could just change everything with a single strike.

That’s right! Like Robkcc wrote, “Hammer” is used in german slang like that (is also the word for the hammering tool). “Hammermäßig” (transl: hammer-like) is used to describe a outstanding striking experience, action, view, taste…etc

Farcebook marketplace. $30, did a search online, couldn't find one anywhere. I think it's made by Baccarat. Magnets are very strong, has a bearing at the bottom.

@@iSharpen Hello Baz, I did a sloppy qick research. Brand name seems to be american, who want to produce German Steel Cutlery and sell it worldwide. That's why they bought the world-class brand "Hammerstahl cutlery". German pronounciation would be like „Hummer Shtull“ (my guess) The Santoku is out of carbon steel, handles with resin infused pakka wood. Pretty expensive at 320€.
