Fun idea would be to have a subscriber showdown. Pick a specific dish and then have your subscribers submit their recipes and then pick a few to go head to head. Maybe you could do it over time and have several episodes almost like a bracket competition like March madness where it goes down and down until the two top contenders battle it out.

Hey, David, I think your complaints regarding the meat thickness/texture could be fixed by slicing the meat across the grain, instead of along. Making the fibers as short as possible will make everything much more tender and have a more pleasant bite

Steak is already cut against the grain. In order to cut it across those fibers he'd have to put it on its narrow side and cut along the whole thing, which is pretty much impossible to do anywhere near well without a slicer.

@@cool_scatter you can cut at a steep angle (so the blade is not at a right angle to the cutting board), or you can cut the steak into pieces and turn them 90 degrees. I normally just cut at a steep angle

Agreed. I'm a meat eater but I do love vegetables as well. I love them for what they are, not because they taste like meat. I will make an exception for the Impossible Meat/ Beyond meat and the like. I also do extend the meat in my spaghetti sauce with minced mushrooms.

I wanted to try a vegetarian recipe yesterday and decided that just using mushrooms would be way too mushy for my taste so I left out 1/3 of the mushrooms and added quality minced beef in its place.

Some more of our savory breakfasts: biscuits and gravy, chicken fried steak with white gravy, hashbrowns, fried potatoes/home fries, breakfast sandwiches, breakfast burritos, frittatas, quiche, chicken and waffles, potato pancakes, omelettes, eggs benedict, steak and eggs, bagels with cream cheese, loco moco, "english muffins", toast, huevos rancheros, grits, eggs sardou, slingers, enchiladas montadas, goetta, skillet dishes, breakfast pizza, and... that's all I can think of off the top of my head.

Changes for better: ROAST carrot and potato. LOTS more and FLAVORLESS oil (you're making cheese- it's not a health product). MSG. Tiny drop of LIQUID SMOKE. GOOD BLENDER and strain it. If you can, SODIUM CITRATE (for non-vegan cheese sauces and stuff too! Gives it a cheesy stretchy gooey texture, it's the key ingredient in American and nacho cheese). NOT TOO MUCH SPICES. People overdo it with the garlic powder and paprika in these vegan cheeses- you want it to taste like fat with savory notes, fairly mild but full of umami, otherwise it's just a weird oniony sauce not cheese sauce.

They could have easily come up with something like that 'cheese sauce' that's vegan AND has many more properties of cheese, even without the industrial wizardry of Daiya or the like. You can make a stable emulsion with oil and aquafaba from chickpeas, which can lend itself to being much more like a cheese sauce with the right spices and such - as well as things like turmeric for color. It's basically vegannaise, but you can then add things to make it more like a cheese sauce from there. It's not Daiya, but at least it would have been trying.

I'm stunned. The ingredients that he laid out to bare; most of them come from meat. Worcestershire sauce...that comes from fish. Oils and other sauces he showed...also comes from meat. The fruit and veggies like lemons, green capsicums, carrots and onions require fertilizing which comes from animals in order to grow. Literally everything in that "vegan" recipe comes from animals. Vegetable stock broth...that comes from meat as well. It's an absolute joke that these clowns think they are eating something that has no animal product in it. I'm laughing in disbelief right now. "Vegans" my ass. They are eating more animal product than I am and I'm a burger man who eats meat regularly. Clowns.... I'm not joking...they are eating more meat than I could ever have. Vegans would argue that they have the same thing without "meat" but the sad reality is, you can't have that Unami flavor without the _real_ _ingredients_ . You don't need animal carcass to create fertile soil however my point stands. Fertile soil is made by organic components. Where do those nitrogen, phosphorous and other micronutrients that animals like cows, pigs and other mammals consume come from? Ants, beetles, and worms, to moles, rabbits, and groundhogs and many more. It's a never ending cycle of growth and consumption. The reality is, people fool themselves into thinking that they eat something without any source of animal product, and they are sadly mistaken. Chances are, their own lifestyle has them eating more animal product than they realize...even more than those folks who eat meat. Don't fool yourselves.

However, that DOES NOT cause us to eat even more meat than meat-eaters. That's just ridiculous. Where I live, we have strict regulations on what is allowed to be labeled vegan and what isn't. @ Chance Phillips His Worcestershire sauce isn't vegan, but you can get many vegan Worcestershire sauces. Some just use Algea and not Anchovies. Others just leave out the Anchovies. Even British Worcestershire sauce are on the market without Anchovies.

There is a very hard trick to making the "cheese" when using a potato....boil time is super short otherwise it releases too much starch and becomes gummy like. Been there

I have a friend from Philly who used to work at a Philly cheese steak shop who made us cheese steaks when we had our first child (we all live in California). He had specific bread delivered from a particular bakery in Philly and used a specific brand of white American cheese. I believe there was mayo involved. So, if you ever need a decently awesome vegan cheese sauce (for cheesesteaks, nachos, mac n cheese, etc.) that you can make at home, here's my recipe: Ingredients: 2 medium russet potatoes 1 medium carrot 1 clove garlic ½ tsp onion powder ½ tsp rosemary 3 tbsp nutritional yeast 1 tsp salt 1 ½ tsp Trader Joe’s Mushroom Umami Seasoning 1 ½ tsp Better Than Bouillon vegetable base (the one I use is the one available at Costco-the organic, reduced sodium variety-but I'm sure other varieties work fine too) 1 can (400mL, ~13.5oz) coconut milk (the fewer the additives, the better) ½ cup or less water (I use the water from boiling the potatoes and carrots. I figure the extra starch is probably helpful) Instructions: 1. Peel, cut, and boil the potatoes and carrots until soft. 2. Blend everything in a high powered blender (this makes a big difference) until ultra smooth, like Cheez Whiz. It may take a while, and you may need to stir or shake occasionally, but eventually you'll get there. If it's really not happening, you can add a little more water. Just be careful with that though, because you can always add more water, but you can't take any away, and it can get too thin pretty quickly. 3. Enjoy ;-)

“Philly Cheesesteaks” anybody actually from Philly will tell you a cheesesteak needs to come with and I quote “SaltPepperKetchupMayonaiseFriedOnions” and that’s it, regular American cheese, no cheese wiz, no peppers, don’t go to Tony’s, don’t go to Max’s just get a cheesesteak from a Papi store, get a bev, and you set, 5.50 for a platter and it’s just as good as those tourist traps

The Amoroso rolls are the reason you can’t really get a good cheesesteak anywhere but the Philadelphia area! We used to have a restaurant here in northern Pennsylvania that imported the Amoroso rolls to make their hoagies, but they closed about 5 years ago! 😫

Love that you tried a vegan recipe! Those cheesesauces are so tricky, been vegan for 3 years now but really can't nail them either. I think just going with a prepackaged cheesereplacement would have been a saver bet in this case. But certainly appreciate the effort!

Cheesesteaks are just one of the few things that the KISS principal is just where I live. Vegan and J. Kenji's style just are out of bounds. For my cheesesteak it's white american cheese, onion, mushrooms, mayo. I grew up in South Jersey so this is just where my flavor lives.

I haven't tested this since I do have a deli slicer at work but I've heard that if the meat is firm enough through freezing than you can use a mandolin in place of a slicer. It's tricky and slower and knife adepts might find it unnecessary, but I thought it was worth throwing out there.

I love brioche hot dog buns. The only thing is, I make cheese dogs. Basically a mozzarella string cheese in the bun and microwaved for 30 seconds. It was my go to meal when I would get home from my graveyard shift.

Just as a major note about the mayo there with it, the mayo is extremely good at creating a moisture barrier between the bread and the meat juices there. I tend to prefer other cheesesteaks than the normal philly...mainly due to mall cheese steaks with the old Steak Escape and similar locations...basically take the normal Provolone version of the basic and add, at least, mushroom and green pepper to the onion when you sautee it, I add jalapenos and banana peppers as well. Then you add shredded iceberg lettuce and thin sliced tomato after it comes off the griddle plate. It's fun to watch people work it on the flat top while you wait.

I’m not a huge fan of cheese wiz, at least partially because it congeals too quickly but I grew very fond of it working in a cheesesteak shop in the mid 2000s. I’d do provolone as well and then a strip of the wiz across. Delicious.

Born and raised in philly. I have had cheesesteak for breakfast, toast bread then cook up your steak i add two eggs salt pepper make that into an omelet without the garlic powder.

I had a cheesesteak for the first time like last year. (Jersey Mike's, probably best one you can get from a chain outside Pennsylvania.) would have probably had one sooner but I got a condition that forced me to avoid dairy for the better part of 15 years until I FINALLY found something that lets me have cheese again. So the first thing is: you wouldn't think American cheese would be the best option on it. But it is. American cheese has that weird tang to it that's that chemical salt that makes it more melty (sodium citrate? Is that the one?) And it absolutely clashes in most traditional cheese-based applications. But beef grease seems to compliment it perfectly. It just wouldn't taste right with a "fancier" cheese. It's also all too easy to ruin a cheesesteak, as I have learned. I attempted to order a cheesesteak from a bar at one point and it was the worst. You need a chewy sub roll like with most good sub sandwiches, and a bad bread texture will absolutely ruin it. And jack or colby or any other "better" cheese doesn't make it better. Finally, having been nearly dairy-free for 15 years... there is no good vegan cheese. I tried every single one of them I could get my hands on (well, mostly... I never got around to trying the raw cashew substitute because that was a level of work I simply could not justify doing) and they all fell short. This might be because I'm ~slightly sensitive to nuts (I didn't have a good milk substitute until Oatly came to the US) but the others always had AN issue to them. Daiya got the CLOSEST to something actually palatable but in the end it has the same issue as diet sodas: i just do not like and cannot get used to the aftertaste. That said... daiya would have probably been better than whatever that puree was trying to be.

Pescatarian here! I'm happy you're starting to touch upon vegetarian and vegan recipes since there's not always a lot of non-meat recipes or options out there Though that vegan philly cheesesteak sandwich did not stand a chance in my opinion, but maybe I'm just biased since I hate vegan cheese

I understand if people don't care for the yellow cheese sauce, but the yellow cheese sauce is in fact the traditional Philly cheese steak topping. I have visited Philly many times over the years, and while there are other options at some locations, almost all places have a big vat of sauce ready to go. I think there is only one major Philly spot that doesn't if i recall correctly. Personally I'd recommend giving it a try before you turn your nose up at it, may not look as nice but it really changes the whole flavor profile of the sandwich.

To be honest - The bread across the board is just not going to give you that last touch. That crisp outside and the fluffy inside. Check out some philly bakeries that supply for the large chains. I promise you, that’s what you need to hit these dead on. It’s why other towns struggle to recreate. Keep it up, love the videos!
