Well, pizza sauce IS usually raw. Whole canned tomatoes, don't ask me why, but I've tested this versus crushed and cubed, have the better, more rounded flavour in several preparations. 2 cloves of garlic, a few leaves of basil and blend. Now, the trick to doing pizza at home without any of the gizmos (cast iron pan, pizza stone/steel, etc...) is this: do it in stages. What makes for a fail is trying to cook everything at once, without having the super hot pizza oven. In a regular oven, the fatty ingredients will just coat everything in fat, as they heat up. and prevent water evaporating out of the other ingredients, if one tries to cook everything at once... So, next time, try this: sauce your dough and put any ingredients on your pizza which need to cook, but won't release any fat (onion rings, mushrooms, olives, etc.) , then put it, as low as it will physically go, into a pre-heated, maxed out oven (full whack, bottom and top heat with fan assist) for 8 to 9 minutes. Take it out, add the cheeses (and anything else you may want on your pizza) and put it back in the centre of this, screaming hot, oven for another 10-12 minutes Trust me, it results in a better pizza than any of those "trick" methods.

When grinding meat you get the best result when your grinder and meat is cold. I usually put the grinder in an ice bath in the fridge and stick the meat in the freezer for 20mins to firm up. Also with the dough you should try and keep your salt and yeast separate as the salt can stop the yeast from working effectively.

The process of 3 day pizza or longer is unique because the longer you ferment the dough the better the flavor and the longer you ferment the dough you get almost sour dough like flavor thus it has more water content in it, the yeast is "feeding" on those good sugars from the dough and the end product is closer to what you get in a standard pizza place. And please man stretch the dough more and also the pizza should be tasted warm or hot not cold... Anyway keep up the good work as always!

Actually David, just so you know. In Italy there is a deep fried pizza sold as street food everywhere in the cities. They're sold at food carts just like your hot dog stands (I think that's what's similar that you guys have). And it uses a different dough to what you were using (it tastes amazing) I'd say closer to a flatbread. So the only part that our eyes should be closed for is the store bought pizza dough (And if I'm being completely honest with myself, the 90 minute proofed dough as well). I'm a firm believer that pizza dough needs to proof for a MINIMUM of 24 hours. But, David, you should definitely look into the deep fried pizza street food. It's basically a good brunch food or hangover food due to it being easy, fast, and greasy.
