I know he was just experimenting, and people do things that don't make sense in retrospect, when running trials. But the fact that you had time to think about it, and still thought it made enough sense that you had to gripe under a joking comment...

So alcohol (ethanol) has a boiling point of 73C. You put direct heat on it on one spot. So it bubbled. Would have been better to put it in a double boiler at attempt 1. You are lucky you didn't set your kitchen on fire😂🔥

Here are a few things I saw that went wrong: 1. The alcohol wasn't enough at the high temperature it needed to burn off. 2. That butter created a layer of grease over the pasta which makes it difficult for the parmesan cheese to stick to the pasta. 3. You need to scrape even MORE of the cheese into the wheel (a food truck I really like does this and they scrape a LOT. Btw, the price of that wheel cheese is pretty good. In my country it costs around RD$20000 which is around US$400+

The second you opened the video by talking about a full wheel of Parm I was like....$$$$$ Much like true champagne only coming from the Champagne region of France, true Parmigiano- Reggiano ONLY comes from the Italian provinces of Parma, and Reggio Emilia. Those wheels of cheese cost a buttload.

Parmesan has to be aged for at least a whole year. It's a serious time investment for cheese-makers, and theres only a handful who will go through that whole process, not to mention that he bought 25 pounds of parmesan still in its casing.

alcohol is flammable (which can lead to explosions or equipment breaking) so usually to make it hot a water bath is used - idk about drinking alcohol but in the lab we never use a flame

I've done that sort of injury to my thumb with a pair of scissors. Was trying to cut a really tight zip tie, and the scissors cut right through it and stabbed into my thumb. It hurt like the dickens, and I stood over my bathroom sink for a few minutes just trying to stop the bleeding. Also, my thumb felt numb for a few days, and it took more than a few weeks for the side of the cut to recover any feeling.

i think the heat gun was too close to the spoon which was a good heat conductor. so you had all this very hot heat concentrated in the middle of the spoon that made it splash up like that. when andrew heated his, the ladle was being heated with more of an even distribution of heat.
