The problem with fresh dough is its alive so its always evolving and growing, if they saved the dough for the next day, the consistency is different so it adds another dimension of work that you dont need etc. I am a chef, I know exactly why dough gets thrown away and its more than okay to eat, you dont have a successful restaurant for 50 years though by having random consistency.
