Have to say mate, these look the business. I may have mentioned before, I’m a baker and have been for 40 years. And in the defence of the mass producers of bakery products, if they used the quality of ingredients and labour intensive methods the home cook allows themselves, the “festive bake” would be about a tenner a throw.😂 On the other hand, I personally will be making these ( or a slightly different version) using leftover turkey, stuffing, gravy and jarred caramelised onions with cranberry sauce. What do think? I’m also gonna be making some decent sausage rolls using your recipe for Boxing Day for visiting family. I’m really looking forward to the compliments for my produce.😂 Thanks mukka. Hope your good and the drilling stops for Christmas.🙄😂

Red onions or purple onions? - I go to a country where they call red wine black wine! I have to say that this did look rather good - it sort of gets the mind thinking about other (non-seasonal) filings? Pork with stuffing and apple, Beef with Sweet Chilli or Horseradish & Mustard (Horseradish and mustard mixed is known as Tewkesbury Mustard - I love it!), Minted Lamb, Gammon and pineapple (might need a few other ingredients to make that one work lol!) etc. etc.

@@Adam_Garratt I think that opinion is changing to reflect reality. Growing up, my French-Canadian grandmother’s pork pies were the big thing, until (after she passed 30 years ago) I looked up various recipes and realized that in the eighteenth century, the French in Canada were inspired by their British neighbors, and that’s what came to the US as “pork pies.” So, keep at it. Make sure history tells the story of some of the best cooking. On. Earth. Cheers 🍻🍻

Great video Adam! I do the same when looking for inspiration, i.e. note down the ingredients of commercial products then make my own, minus the sugar and chemicals. I am planning to make beetroot & mascarpone filled pasta this week. We like the del ugo fiorelli and when lockdown first started, I was making loads of ravioli & tortelloni. Have beetroot, cheeses & flour/semolia at the ready. I would love to see you making filled pasta. Tonight am stewing pork, beef, veal with celery, carrot & onion in wine for a ravioli tomorrow. Keep up the good work!
@Adam_Garratt3 жыл бұрын
Oh wow I am loving the idea of beetroot and mascarpone! I need a pasta machine. I've wanted one fir ages but never got round to buying one
@annteather28263 жыл бұрын
@@Adam_Garratt my 1st attempt at home made pasta (recipe from an Italian colleague) years ago was quite hard to roll using standard rolling pin. I found a chapatti roller easier as it is thicker in the middle. I now have metal pasta rolling machine (goes up to 7 but that is too thin, so I go to 5 or 6). My homemade ravioli made by creasing middle of strip and blobbing the fillings along the line came out ok but a bit random in sizes. I have just bought a ravioli former from John Lewis today and went for the Marcato 12 hole with wooden rolling pin £31 the cutting profiles are about 2mm high & vertical so should cut well. The John Lewis own brand is more like pressed steel and not at all sharp! There is an even more expensive Marcato with metal roller, but only 10 holes. Suggest starting with rolling pin to see how you get on, before spending a fortune on equipment. Look up Pasta Evangelists on KZbin, she did one recently with a Japanese man comparing Italy vs Japanese noodles. Good video that made me feel totally inadequate!
@annteather28263 жыл бұрын
@@Adam_Garratt BTW I discovered when 'dusting' the ravioli former that using medium semolina not only means they don't fall out when turned over, so I had to prise out with a knife, the semolina can puncture the pasta when rolled to no 6 setting. It made it look like the ravioli was bleeding! My next batch was easy to tip out as I 'dusted' with plain flour.

I have never heard of 'Greggs'.I have seen similar looking pies/slabs cannot think of the name but not Greggs. Mind you I don't get out much. :-) Is it a northen thing, Leicester being - all of 50 miles north of Milton Keynes? The location of Chez Jacques (me) Looked good mind you. Often it is not a good idea to look inside a commercial product of ANY make. I don't normally (never so far) eat 'hand' pies but that looked nice and not fussy and would go OK as a substitute for a traditionally shaped pie. This is on my growing list of things to do. My cat used to greet me each evening as I got out of my car, plodding t'wards me tail up in the air. I could never understand how people could consider Cats had no affection. Happy Christmas.
