I might be jaded by the KZbin algorithm pleasers but a series like that sounds very expensive to produce and might not be very clickable. I like what Josh has done but his content these days has gotten very buzzfeed. Here he is eating French fries because most of his target audience can relate to that. I might enjoy watching a travel food video, but would it bring in the views to pay off the travel expenses? Much safer to just make a chicken nugget video or something…

Not only the fries either. My favorite fast food chain burger is the flamethrower. I just love that sauce they use. DQ in general is just better fast food than most. Not to mention their blizzards are super good. The only downside is they can be very slow. I guess that the trade-off if they cook to order. A lot of these places sell a bunch of their products off a food warmer.

Having worked fast food, I can tell you what's going on with the under-seasoned/no salt fries: front of house is dropping the ball, or no one knows who is supposed to salt the fries after they come out of the fryer; so the kitchen expects front to do it, but front expects kitchen to do it.

@aurelius8439
@aurelius8439 6 ай бұрын
@coleirish1229 probably different periods. I'm actually fascinated now because circa 2006-2008 at my restaurant, the spicy seasoning was only used menu-wise on grilled breasts. Process wise, you'd pull the ordered spicy grilled breast from the fridge, sprinkle with the spicy seasoning on a prep table, then cook on the griller. The way we made spicy fried breasts was to grab a handful of the breading and put on a plate. Then milkwash a breast, coat in the handful of breading mixed with the spicy seasoning, then drop in the pressure fryer solo during a slow period in the morning.

Lots of variables. As you noticed, oil freshness varies by location, that's probably on the franchisee. Salting is dependent on who's on the fry station. You at least controlled for freshness. McDonald's fries are 9 when hot out of the fryer, 7 about 5-10 minutes later, and about 5 when I get home. Why I'm usually eating them on the way.

"Don't trust a skinny chef" is something only Boomers would say because they're old enough to remember Depression era parents who actually got thin from starvation. That advice is moronic today. If anything, be suspicious of fat chefs. Big portion sizes and covering everything in oil isn't good for you. If anything, skinny chefs are people who care about food. Today, it's buff chefs. Cooking is a tough job. People who care about their profession are lifting weights and getting health. The next generation of cooks will be the most swole in history.

26:51 I worked at my local DQ when I was in high school and we cleaned the fryer every night by using one of those machines for filtering the oil and we would add more oil as needed. When they came out of the fryer we would salt them and most importantly, once the fries in the warmer had been in there after about 10 minutes without being served we would just put them in a couple large fry containers for the employees to snack on if we wanted.

Two separate comments. 1. It's not a permanent menu item, but you have got to try Taco Bell's Nacho Fries when they are in rotation. They are surprisingly super good, and you dip them in nacho cheese instead of ketchup. 2. While not a national brand and not fast food, anyone who can should visit Chickie's and Pete's and have thier crab fries. They are crinkle-cut with an old bay like seasoning. Also, like the Taco Bell fries, these ones are served with warm cheese sauce that's amazing.

Ah, the legendary fast food french fry. As I am 70, I was blessed to have been around when the amazing McDonald's fries cooked in beef tallow existed, and sadly ended in 1990 when it was considered too high in cholesterol and replaced with vegetable oil. I am positive that you would have, hands down, chosen those fries over all the others because they were the total package, flavor, crunch, texture, amazingly great. Have not had a better fry since then. RIP beef tallow.

Salt is definitely the key for a great tasting fry. It has to be applied to the immediately after it hits the fry bin, the high temperature of the fries will fuse the salt to it locking the salt to the fry. A restaurant that doesn't have a large number of locations (60+) that imo has the best waffle fries is PDQ and there chicken tenders are of the chart.

When I worked at Arby's 1990 to 1992, for my own meals on a long Saturday I got a giant roast beef with extra meat, a cherry turnover that I murdered with frosting, a jamocha shake with extra jamocha flavoring (if you held the lever at just the right position you could emphasize the flavoring to milk ratio), and fries that I cooked an extra 2 minutes or so. The fries were excellent. The above may sound like a ridiculous meal but this was me working noon to close in the largest Arby's in Texas (Northeast Mall in North Richland Hills) and I NEEDED those calories just to not lose weight from my already thin frame. We had curly fries at the time but I never got on with those. Too much seasoning and "tartness" for me and I never thought they cooked as well as our normal fries.

KFC chips in Australia pack the secret sauce of chicken salt, not as much as kebab shops or charcoal chicken places but enough to elevate them above all drive-thru options. Every decent takeaway chip shop in Aus has chicken salt as an option or default depending on area / location. Kebab shops often give you the most 'flavor' per bite with an unhealthy amount of bright yellow chicken salt on a serve of chips that you have ever seen. Equally legendary and unhealthy For the uninitiated chicken salt is basically concentrated chicken stock powder mixed with MSG.

This might be the best tier list I've seen. I'd personally put Popeyes at 10 and KFC at 3, but I really can't complain about the whole thing, especially the top 8. Fantastic job by the guys

One issue he couldn't test here is consistency. This is a really where McDs wins. I've driven all around the nation for over a decade and I grab fast food a few times each trip. McDs is insanely consistent compared to other chains. You can order in alaska or florida and get the same thing. BK is also consistent....ly terrible They have fallen far. Wendy's is one of the least consistent. I've had some of the best fries and burgers at wendys and some of the worst. Even Shake Shack, one of my favorite chains, isn't consistent on their seasoning.

I'm always amazed at how large the portions are, I think our large McD fries are somewhere around half-¾ of those

Love these type of videos. What chain am I gonna want to try today now from this stuff lol. Also shake shack has never had properly salted fries for me shocked to see that salt level.

One of my favourite things about Jollibee fries is that if you leave it for a night, unlike other fries that dry out, it's still good. It's got a very different texture so even old Jollibee fries stay firm and delicious even if they're no longer crispy. I used to think all fries were like that and I got burned by the awful dry overnight fries I had in the future.

I believe you forgot Smashburger which is 300+ locations and nationwide. They do rosemary shoestring frys as there "normal frys" which are crispy as heck, always salted well with also black pepper that they grind at the store with rosemary oil drizzeled on top. I bet it would be top 10 on this list

Getting a good fry at McDonald's is an anomaly. Every time I've had them in memory, half the fries were hard and almost inedible. Good to see Carl's up so high, I love their fries, both versions.
