🌱 Recipes!
Baked apple raspberry oatmeal (3 servings)
3 apples
1 1/2 cups berries (I used frozen raspberries)
1 1/4 cups rolled oats
3 TBL ground flax
3/4 cups chopped walnuts (or nut of choice)
1/2 cup soy milk (or plant milk of choice)
1 tsp. vanilla
2 TBL maple syrup (optional)
Preheat oven to 350F. Layer apples and berries into oven-safe baking dish. Mix remaining ingredients until thoroughly combined. Spread oat mixture evenly over top of fruit and bake for 30 mins. After 30 mins., turn off oven and let oatmeal sit in oven for around 10-15 mins. more. This will help soften the apples even further without browning your oats too much.
Chickpea Veggie soup (3 servings)
1 onion
1-2 cloves garlic
1 1/2 cups chopped carrot
1 1/2 cups chopped celery
4 cups broth (or more if needed)
1 tsp. soup seasoning (I used a blend of thyme, parsley and oregano)
1 1/2 cups cooked chickpeas (or any other bean you like)
6 cups chopped kale or baby spinach
Serve with 1/2 cup of cooked whole grain (such as quinoa) to hit another box of the daily dozen. Or increase the amount of cooked grain you eat at dinnertime instead.
Sauté onion and garlic for a few minutes before adding carrot & celery. Let cook 1-2 minutes then add broth and seasoning. Cook for around 10 mins., then add beans. After 10 mins. more, add greens and let cook down for around 5 mins. If needed, add more broth. I served with nutritional yeast, chili flakes and a squeeze of 1/2 a fresh lemon.
Red lentil curry (3 servings) based off of this recipe: rainbowplantlife.com/vegan-re...
1 onion
2-3 cloves garlic
2 tsp. minced ginger
3/4 tsp. cumin
3/4 tsp. turmeric
1/2 tsp. ground coriander
3/4 tsp. Garam masala
1 1/2 tsp. curry powder
+ pinch of black pepper to increase bioavailability of the curcumin in turmeric
+ salt to taste (I used about 1/4 tsp.)
3 cups veggie broth (more if needed)
1 1/2 cups chopped broccoli
1 cup chopped mushrooms
1 can (14 oz.) diced tomatoes
3/4 cup split red lentils
10 oz. tofu (approx. 1 1/2 cups)
1/2 cup soy milk (or coconut milk)
Optional: 2 TBL almond butter (this is Nisha’s secret ingredient, which adds great flavor! I just happened to be out)
1/2 lemon, juiced
Optional: chopped cilantro to finish
Serve with 1/2 cup cooked quinoa (or more) to hit another box of the daily dozen
Sauté onion, garlic and ginger for 2 mins., add spices and sauté 30 sec. - 1 minute, until toasty. Add in veggie broth, broccoli, mushrooms and tomato. Let cook down about 10 mins. Add red lentils and cook another 10 mins. Add tofu and soy milk (and almond butter if using), let cook another 5 mins. before adding lemon juice and remove from heat. Add fresh cilantro if desired.

I used frozen fruit and veg (except the mushrooms) for the entire meal prep, made it a double batch, and pan fried my tofu to add before serving because I like it firm and crispy. My house smells heavenly. The whole thing took me 1.5 hours and was really affordable. 10/10!

I am so glad you're doing this! I've been using the Daily Dozen app for awhile now. I printed out a full page image of the daily dozen and then wrote out all the veggies, fruits, nuts, whole grains, seeds, etc... so that I could use it as a guide for grocery shopping and meal planning. I also kept track of the colors of the foods I eat (Eat the Rainbow) and discovered that there are colors that we were missing out on. So, I've found it helpful to use BOTH of those guides when figuring out what to prepare so that I hit all the daily dozen and all the rainbow colors. I look forward to more of your EXCELLENT meal prep videos using the Daily Dozen. They are so inspiring!!

Great plan! I'm sure you're familiar with Dr. Greger's guide to selecting the most nutritious vegetables. For those unfamiliar with it, vegetables with the most color have the most nutrition. Red onions are the best, followed by yellow, and then white. Deep purple or brown peppers are packed with vitamins. Yellow and green have somewhat less. Dark purple or deep red tomatoes have more vitamins than yellow ones. I'm addicted to red cabbage and try to use it as much as I can. Eating the rainbow is a great idea and very appealing to the eye and palate!

Surprisingly, yes! I definitely wasn’t expecting to… but maybe since I hadn’t been eating that healthy the last few weeks, when I did this prep I felt a lot better by the end of the week. Truly made me want to keep on a healthy track!

I really like this because I’ve tried the app and checking off all of those boxes and worrying about fitting it all in was overwhelming and stressful for me. So you doing this and as a meal prep which also eliminates stress in itself, where I don’t have to think about it, is so appealing to me. 😁

When the first statistic about only 12% of Americans getting their recommended intake of fruits and veggies appeared, I was in disbelief. I actually expected the percentage to be much smaller than that. I live in coastal California (pretty much the opposite of a food desert), and it seems like nobody really eats enough fresh produce.

Smart! When you use turmeric in anything, it's smart to add some cracked black pepper too. That makes the turmeric's benefits more accessible by your digestive tract. It's such fun to grow some herbs so you can snip whatever you need. I love to use cumin, curcumin, garlic, onion salt, paprika, no-salt herb mix, and black peppers in many dishes. Makes food ever so much better! Happy eating!

Wow! What a great selection of healthy meals, Maddie - thank you so much for this video! I would never, but never have thought to make breakfast the way you did - and yet I eat quite a similar breakfast. I soak the oats overnight in water with 1 tbsp of ground mixed seeds, and add the berries and yogurt the next morning with a teeny drizzle of agave nectar because I have such a sweet tooth. But this is a great idea! And as for lunch and dinner, you're talking about some of my favourite kinds of meals there - soups and curries! Nisha of Rainbow Plant Life is a great cook to follow, I think - she takes a lot of care with her recipes. I would love it if you repeated last week's and this week's videos with different ingredients another time. It would be so helpful. And I feel that I could really meal prep this kind of food because it is so much to my taste I simply wouldn't tire of it. Imagine, if you eventually put together 10 of these "food prepping the daily dozen" videos, there would be a whole month there that complies with the Daily Dozen as a structure for people to build from to try other meals as well. I mean, you could put it in a book, really!

After your last video, I challenged myself with this app. While I eat everything on here, it was difficult to check off all the boxes. I could barely eat dinner I was so full from the day. This will definitely help! Also , I’m not sure it means to eat turmeric everyday. I took it to mean use a 1/4 tsp turmeric or one of the other herbs and spices listed. That seems to follow the same pattern as the other categories.

Hi Maddy, did you know that you could bake directly in the glass storage containers? You only should not put them on a hot oven rack. So remove the rack before preheating the oven. This way the oats would look nicer and you could season each portion differently to have more variety in your meals

Great question! You can do it a few ways, you can definitely cook other meals on the same prep day (or at last components such as extra grain, beans and wash/ chop extra veggies). Or of course you could prep again on the 3rd night. Really whatever works best in your schedule!

✅✅ Excellent video. Packed with lots of good ideas, good recipes, and useful information. You are a very upbeat and good host. I think you should do a TV show. You only missed one thing… Dr. Gregor says that broccoli should be blended raw first so that the sulforaphane will form. Once it’s blended, then you can cook it with no problem. He says it’s like those glow sticks. When you bend them in half, a plastic barrier breaks and the two parts mix together which makes them glow. It’s the same with broccoli. When you blend raw broccoli, two compounds mix together to create Sulforaphane which does all kinds of amazing antioxidant stuff in your body. Thank you! -Lorne Holman in Calgary Alberta Canada 🇨🇦

Hey! The baked apple/berry/oat dish looks really good and that seems like a very clever and easy way to have breakfast prepped for three days. I might have to try that! I have blueberries and apples, on-hand, right now. I wasn't familiar with the daily dozen, before, this, but I knew a little bit about his work. I'm looking at the list and it recommends getting multiple servings for some of the categories. Are you doing that with your meal prep, or just trying to hit eat category once?

Hi, Maddie :) Sorry, I'm not sure why I didn't see this, until now. I assumed I would get an email notification if someone responded to a comment, but I guess not. I'm still learning my way around KZbin. I hear you that the baked oatmeal could be a healthy dessert option. I tend to go for chocolate, with my desserts, like a chocolate sweet potato pudding that was inspired by something I saw you make. I suppose it depends on what one is in the mood for! I'm going to try making the baked oatmeal in single serving glass containers, though I see how I'd probably have to use about half the apple, to make that work. I do want to point out that the baked oatmeal probably has about 50 grams of carbs (per serving) just on its own, so adding yogurt and a banana probably adds about 20 grams of carbs. If you're pregnant, I'd understand why you'd need those extra carbs, but for any non-pregnant person trying to lose weight, that might be too much. Thanks re: The Daily Dozen. I've been using it almost every day, for three months, now!

I take it this is a strict vegetarian / vegan program? I love the app and am so thankful you shared it!!! I do consume some meat, but we raise it ourselves with lots of love and care (beef and chicken). I assume I'd just mentally swap one of the bean servings for a meat? I eat like this anyway, but sometimes life gets a bit chaotic and the app is an excellent tool for keeping you on track. I'd definitely be eating more berries as the "other" fruit ... berries are nutrient-dense and usually more gentle on the blood sugar. I have a half of a pear or apple in my morning porridge, but the other fruit I eat each day is usually berries (we grow lots!). My morning porridge is with homemade almond milk, sweet potatoes, the apple or pear, red lentils, chia, hemp seeds, lots of spices (ceylon cinnamon, cardamom, ginger, coriander, fennel, nutmeg), 2 small dates for sweetness, and a good pinch of Redmond's real salt. And lately I've been having a veg soup for lunch using the rice and millet ramen cakes from Costco. I do use homemade chicken bone broth as the base, as well as turmeric, fennel, ginger, and cumin for the seasonings. And lots of homemade ghee ... that and fresh pressed olive oil are pretty much my only added fats. Well ... anyway ... thank you for sharing!! ❤ Joanne in SW MO

Hey Joanne! Thank you for sharing. 🤗 The app/ concept invented by Dr. Greger is actually more about making sure you hit all of these foods every day. So I have seen some people eat the daily dozen AND some meat items, but definitely making sure all the boxes are ticked off first, not swapping any of the servings. 😊 I personally don't eat meat because I am vegan, (and Dr. Greger also has some great info about why not to eat meat nutritionfacts.org/video/how-much-does-meat-affect-longevity/) but of course it is always up to eat individual how they choose to follow the app. I think it's great you've looked into it to incorporate more of these foods into your diet! 🙌🏻

@LetsEatPlants I was vegan for several years in my 20s and 30s. Finding what works best for our individual needs / bodies is definitely like being a detective with lots of trial and error! Thanks for expounding! I've never physically been able to eat that many beans in one day or at one sitting. I forced it for about 20 years, doing "everything right" (soaking or sprouting prior to cooking ... never cooking straight from a raw state). I do ok with a small amount each day, and can tolerate red lentils and split mung dal the best by far ... so I tend to stick more with those but do have them daily. I'm a healthy weight for my size and age (5'4" with very small bones - my weight fluctuates between about 117lbs-122lbs ... and I'm almost 50). Weight isn't an issue as long as I'm mindful of what I eat, and I also sleep excellent, drink plenty of water, get daily exercise (usually a 3-4 miles walk in nature), etc. I'm just thankful for the app as a handy checklist!! 1 1/2 cups total cooked per day… so for breakfast you could just have 1/2 cup cooked oats and then fulfill the other whole grain requirements in other ways throughout the day. 😁

Is the tofu you used in the curry just pressed and directly from the container? Do you precook it in any way? How is the texture if it gets just a light steaming/heating in the curry? I'm always cautious that it can taste rubbery or bland if not spiced or crisped first.

Not pressed as it’s an extra firm tofu so no need to press it. 😊 Sometimes I will freeze it and wring out the extra water once defrosted. That works great as well. But in this case it was just plain! I don’t find the need to crisp it up for curries because I like the way it melds into it, but you definitely could crisp it up first if you prefer. 😀 Or use a silken variety for even more melding. 😂

Loved this!! And I have a request -would you consider doing a vid about eating out, fast food and sit-down restaurants off a regular menu - ie, not a vegan restaurant? I’m now 4.5 weeks into WFPB plus eliminating allergy foods (no soy, wheat, nuts, etc) and doing just fine at home, but leaving on a road trip in a couple of weeks and know it’s going to be HARD! I’m taking a cooler to keep stocked with hummus, celery, carrots and fruit, as well as gluten-free crackers, granola bars and such, but trying to get vegan, gluten-free, nut-free, soy-free in a restaurant…. EEK 😬 Any suggestions from you and others here would be MOST appreciated! ❤❤ Wish me luck! 😂

Hey that's a great idea! I don't eat out much (maybe once every 1-2 months) but I think it would be helpful to many. Have you looked into the Happy Cow app? www.happycow.net This will tell you all the restaurants nearby and they have options to show omni restaurants with vegan options, vegetarian restaurants and vegan restaurants so usually there's a lot to choose from! I would recommend to look through menus before going and/or call ahead! I've seen many people eating WFPB suggest to let the restaurant know beforehand and most of them are very accommodating and can do simple baked potatoes, steamed veggies, stirfrys with less oil, etc. Definitely join the Facebook group Forks Over Knives because there are a lot of great suggestions in there as well, and you could always ask in that group if anyone knows of a good restaurant in whatever particular city you happen to be in. 🤗🤗 Hope this helps a bit! I bet that will be a fun trip!

@@LetsEatPlants I’ve not had luck with Happy Cow here near the TN/NC/VA border, but hoping it’s better as I go to different areas. So far I just Google vegan restaurants for the town, but I’m in the south where we’re very meat heavy, and it’s usually used to season vegs as well. It’s going to be a food adventure, and hoping I don’t get too sick of hummus! Lol (Oh, and thx for the forks on Facebook suggestion! I loved the movie but find the recipes too fancy-involved, so I haven’t looked at their site or info in a while. Will check back in!)

Dr. Greger even has it on the Daily Dozen under the whole grain category, if it’s a whole grain bread. 😁 But you could even add the bread on top of the daily dozen, as that is the minimum you should eat.. if you have room for extra, you could add it even if it’s not whole grain. 😊😊

It was actually a pretty perfect amount of food! If anything, maybe slightly not enough. Dr. Greger mentions that the calories in the daily dozen are usually at the low end, so depending on what you make from the DD it may not be enough, or it may be just right for you. Usually I find people only say it’s too much food when they add in a lot of extra things that aren’t on the DD. 😊😊

Definitely can be cheap or expensive depending on what you buy! Oats, chickpeas, lentils and tofu are all pretty inexpensive (esp. compared to meat!) and produce can be cheap if you keep an eye out for deals, seasonal and non-organic. 😀 Some things like quinoa and frozen fruit can be pricier, but I like to shop around and make sure I’m getting the best deals.
