American here - I have always made tacos with the taco seasoning packets. I made his street tacos out of this book. I will never use the seasoning packets for taco night again! My husband even agreed

I had the same with mashed potatoes. Always used the instant flakes. But once I started just using fresh potatoes and mash them, it's such a difference in flavour. Same with pizza. Selfmade is so muc hbetter.

I’m not sure why the recipe doesn’t call for it, but it’s common to bake a graham cracker crust for about 10 mins to firm it up, even for an icebox pie like this one. Thanks for sharing a cool recipe from this book.

I have seen non cooked graham crusts, but I definitely prefer the flavor and texture of baked ones! It gives it a toasty taste.

When you make a crumb crust like that, try using glass or measuring cup with a flat bottom and straight sides to press it in the pan. And yeah, in the U.S we do have ready made graham crust and chocolate crumb crusts available in most groceries. They come in a disposable pan and are quite cost effective, especially as a time saver. Easiest banoffee pie ever - ready made crumb crust, ready made ( tinned or jarred) dulce de leche or caramel ice cream topping, layer with sliced bananas and whipped cream in a can or frozen whipped topping. And that 7 minute frosting (marshmallow topping) is a classic frosting for coconut cake in the US south.

You can definitely buy graham crack crusts here in Canada as well. We also have marshmallow fluff in a jar that would work as a topping. For home made crusts put it in the oven for 10-15 min after you have it in the pan. Then refrigerate. It will stay together better and come out of your pan.

This book seems to have lots of nice recipes! Many celebrity cookbooks are a bit just for the novelty, but this one seems great.That pie filling looked so tasty and the topping turned out beautifully.

That chocolate filling is essentially a chocolate drink like we make in Italy, just with a little more starch and an extra egg. Make it without egg and reducing the starch by 1/3 or half, and seve it piping hot with whipped cream on top on a miserable, cold, rainy day to your kids.

nice job Barry! if you grease the pie dish with butter before you press the crumbs in it'll come out WAY easier. I too thought the butter in the crumb mixture would be enough, but greasing makes a huge difference :)

Fun fact, the log is also called a Swedish fire log. The basic principle of it is that you light in the middle, and as it burns its way down, the rest of the log will catch, and last longer vs individual chunks tossed in the fire pit.

Little tip 😊 The marshmallow topping is an Swiss meringue and you know it's ready to take off the au bain mari and start whipping it when all the sugar is dissolved, you check this by rubbing a bit between your finger tips and you can't feel any sugar granules 🙂

it is actually a swiss meringue. Italian meringue is made with a hot sugar syrup.

Yah, I have no idea how cost-effective it is as I haven't lived there in a while, but you def can pick up ready-made pie crusts (including graham) in the States.

Yeah, Graham is definitely pronounced as Grey-'em, it's just that lot over the pond who can't seem to work it out, kind of like Geoff too, that one stumps them hard... :P

We also have graham crackers here in Canada -and we pronounce it "gray -ham", two syllables! Wonder if the inventor of the crackers, Reverend Sylvester Graham, would appreciate his surname pronounced as "Gram" :). Each to his own and all in fun. In your downtime, look up the history of Graham crackers. It's, ahem, interesting.

Next time when trying to put the crust in the pan take the bottom of a measuring cup (1 cup size) and run it along the bottom and the sides. It'll help make a smooth even bottom. Then bake for like 10 mins in the oven to help it set up.

The clingfilm trick works when making homemade custard too. My mum taught it to me when I was little. Only way to be sure there's no skin. ☺️

I would love it if you made the bologna sandwich. It is my Best friend's goto sandwich. She loves them. I want to show her a different way to make them. She fries up the bologna and slaps it on bread (mayo and mustard on it), and that's it.

I wish I'd had the chance to watch this sooner, so that this little tip would have had a better chance of being seen. The cream of tartar used in an egg white meringue is not a lifting agent, it is more important than that. What it does is act as a stabilizer for the foam so that it can hold its shape much better. If you forget it your meringue may stay in place a bit at first, but it will go flat very soon no matter what you do.

I don’t know about where you guys are but here in Australia we can get digestives with a chocolate coat on one side so that we don’t have to worry about getting a chocolate piece melted. We can even some dark chocolate one as well as milk chocolate ones.

Barry, put ALL the crumb mix into the pan and use a cup or spoon to press the crumb out and up the side. WAY easier. Also, not marshmallow - that's a meringue. Although, it could be "marshmallow fluff" which also isn't marshmallow. :)
