I know exactly why the jump works the way it does. Pressing the spacebar is applying a set amount of physics force on the Y axis. He has a script checking whether you're touching the ground or not, and then flipping a variable if you aren't to disable jumping. The bottom of the collider probably clips into the ground, or the script is a little slow, so pressing really fast is letting you get multiple physics impulses applied at once.
