I have tried this recepie today and it’s the best sponge cake I ever made. I’m so happy that it didn’t get deflated as usual and it’s so fluffy and not dense as usual. Thanks for the recepie. The only ingredient I skipped is the lemon juice in the jam as I don’t like anything sour. Most of them say that the sour balances the sugar but for me it’s just the opposite. Even without the lemon juice, the jam was too sour . But the sponge was amazing. I have finally found the forever recepie.

I made this today! I loved the way it came out, so airy and light. It was my first time whipping egg whites and I was so worried I had over mixed it.
