28:27 it's not a scam. The english translation is bad, it's not cabbage. A lot of dishes have some kind of metaphor name to it rather than what it actually is (like "ants climbing the tree" or "buddha jumps the wall"). It's also not the sweetpotato dish some commentors are suggesting. It's very similar but this dish is made of fried egg with a caramel coating. It's sort of like the sweetpotato dish but it's not. And usually with these kind of dish (caramel coated dish). It's supposed to come out of the kitchen super hot with melted caramel. And you get a bowl of cold water with it. You are then supposed to pick up a piece and the melted caramel will create the spuer fine strands that looks like the one in the picture and you dip it into the cold water to cool the caramel and solidify it and not burn the inside of your mouth. But it only works for like 5 min after the dish is served to you since the caramel will otherwise cool off on it's on in the dish and you won't get the strand effect. It's kind of hard to make right to get that caramel strand effect and a lot of restaurants don't have skilled enough chefs to do it right. It might have been the case here.

1. the guy didn't scamed you, the dish you pointed out on the menu was exactly they served, just that guy did not get the meaning of cabbage. 2. the hotel did not scam you, the disposable towl generally is offered in the express inn in China, and this is for people who didn't prepare their own towl or who don't wanna use the reusable towl for personal hygiene, but you have to pay for it. of course, the price will be higher than you buy it online. the disposable facial towl or shower towl are really popular in China, cuz it is easier to take for travellers since the material is lighter. if you don't wanna use it, you can just ask the reception offer you the normal towl. welcome to Harbin China.

that sweet popato you ordered is what you ordered, it is not scam, it is called Candied sweet potatoes, 拔丝地瓜, it has strings , or thread like , becuase it is sugar, the picture on menu book is over presentation of those threads and only some places make that many threads, not most places, you can go to different resturuants and try order the same by showing picture to them, they come out the same dish
i have seen this food look exactly like the picture show on the menu, its a Michelin one star restaurant called 福1088 in shanghai

The dish is mistranslated on the menu. "酥黄菜" was translated to "yellow cabbage" because "黄菜" own their own is a kind of brown mustard. But this food is actually literally a soft (酥) yellow (黄) dish (菜). It's also named Silk-pulling Eggs (拔丝鸡蛋). The stringy thing is syrup. Usually, you have to pull them yourself.

Yes, it is spun sugar however the chef didn't spin the caramelized sugar as in the picture. Hence the confusion. They should have taken a picture of their actual food presentation instead of a stock picture of the dish, else it confuses customers.

The street where you live is the Central Street, built by the Russians back in 1898, there are lots of buildings from early 1900. It's ground cumin and peanuts on the sausage.. And it wasn't a scam, it was just a bad picture they chose at the restaurant... Disposable towels these days are very popular, better than those ones that are bleached and used by lots of people actually, it is a one use towel.

Fun fact: The ice cubes are special ice ‘harvested’ from the local river ‘Song Hua River’ that passes through the city. It is the same food with a big downgrading in cooking skills. But tbh, for that price, there is no way you can get what's in the picture. All the strings in that picture are sugar strings, which require quite a lot of work, a dish like that costs 138-158 yuan in higher-end restaurants. The dish you get is the basic version of Su Huang Tsai 酥黄菜, which is fried fluffed egg white(not sweet potato) with sugar coating, people dip it in a bowl of cold water to cool down the coating so it turens crispy, interesting texture. BTW, it's always called a "lady's dish" or "kid's dish" in northeast China, same as the Guo Bao Rou锅包肉. (In fact, lots of dudes order them "for the ladies and kids", but nah, they are ordering for themselves, never trust dudes🤭)

Harbin has 5.5 million population in the city (10 million in Harbin metro). the latitude of Harbin is actually not very high. its about the same latitude of Toronto. but Harbin is a lot colder than Toronto bc its part of Southern Siberia wheather system. winter average temperature in Harbin is -20c to -30c. occasionally it goes down to -40c during windy days. going 1,300km further north from Harbin is China-Russia border city Mohe, average temperature there is -30c to -40c and can goes down to -55c.

The main difference between the picture and the real dish is the stringing looking things in the picture which is caused by stretching semi solid sugar during cooking process. They don't stay in that form too long and collapsed quickly. To avoid this kind of misunderstanding is to use a translator device when talking to people who doesn't know any English.

🕑 Time 28:28 老式酥黄菜/Old style crispy cabbage - 🤔 Out of curiosity, I found out a few interesting things about this dish: ☝️Firstly, If translate only "黄菜" (yellow vegetable) alone, Google translate will translate as "yellow cabbage/黄(白)菜". ✌🏽Secondly, As in English, "dish or dishes" may refer to particular type of food served on menu. Similarly in Chinese, "vegetable/菜" can also refer to dishes and not necessary "vegetable". 🥸 Hence, this dish "老式酥黄菜/Old style crispy yellow vegetable" should be translate as "Old school crispy yellow (egg) dessert". 🫣 However on further viewings of this dish various cooking videos, the picture shows on the restaurant manu is actually the new school presentation decorate with lots of spin or spun sugar. 🤓 This crispy yellow dish is a popular home-cooked dish in Northeast China. Its earliest name is 'Crispy Ginkgo'. Ginkgo/白果 was also the name for eggs in the late Qing Dynasty. Later, it was renamed "ShuHuangCai/酥黄菜" (Crispy Yellow Dish), from big hotels to private restaurants, it become a popular dish at banquets. everyone who has eaten it is full of praise of these golden triangular piece or sometimes ball shape (🤭 except both of you). 👨🏼🍳 The recipe is quite interesting. First fry a large round thin omelette, fold it in half. Cut into strips, then into triangles or rounds, press with fingers to seal the edges tight. Fry egg roll strips in hot oil to puffed into golden brown, take out and put aside. Caramelised sugar with oil and water in wok till brown. (Option for decoration, take out some caramel and spin on the baking paper). Add the puffed egg roll slices, mix well till all are coated with caramel. Yea glasses and extreme cold don't mix well at all. You want to cover your face at that temperature but it doesn't just fog up your glasses. If you stay outside long enough, they form a thin layer of ice instead.

Just remember to register with the local police where ever you travel (most hotels will help you to register at the front desk when you check in). Even if the police don't make big troubles for you, theoretically they have the authority to do so and fine you for hundreds if not thousands of rmb. We ran into that problem and the local police were within their right to fine us and we had to find a friend to help us to lower the fines (was like they wanted to fine us 1000rmb for each day we didn't report to them)
