IVs don't matter that much... They can make or break a match but it's rare. I definitely wouldn't let bad IV stop me from building a Pokémon.

I am on my 3rd season and just broke ace. Something finally clicked lol. I realised i was panic-switching and giving more energy, and unnecessarily panic shielding. Just one day finally got it and i was so happy! I still dont really get how to count moves even though ive watched a lot of videos on it lol. I just go by feel and sometimes im right, soemtimes wrong. Will be a long slog til i can make it up to expert or veteran...prob will never be legend but maybe someday !
