for a lot of viet foods like cha gio (the eggroll/spring roll) and banh xeo (the pancake thing) it's usually eaten wrapped with lettuce and a lot of mints and veggies and dipped into the sauce, haha so that's why they gave you a lot of veg. It's pretty similar to korean ssams

The noodles that you got with thin pork slices and crunchy bits on top is called Cao lau. It’s a Hoi An specialty. So good! I didn’t get to spend time in Da Nang, there’s supposed to be the best avocado I’ve cream from a market there.

24:02 That called "bánh vạc", a popular dish in Hội An. The world "vạc" in Vietnamese mean cauldron, we call it by that name because they look like a cauldron made from rice flour with the filling inside include with shrimp, pork, bean sprouts, wood ear mushrooms mince together. The dish cooked by steaming and usually served with vegetable and sour sweet fish sauce. Must try in Hội An. 👀👍 Fun fact: There is an oral story about the second name of the dish, "white rose". They said that a long time ago, there was a tourist who came to Hội An to enjoy this dish. After seeing the dish for the first time, that person just said: "Beautiful white rose!". Since that time, "bánh vạc" has become popular with the second name "hoa hồng trắng" ( which means "white rose" in Vietnamese ) beside the original.

The food is good, accomodation is top tier, people are nice, etc. tbh you can go to any random food stall orr restaurant there and will always receive like godly food lol

What you had with the "banh uot" which is the non-stuffed version of "banh cuon" ... means they just give you the rice noodles without rolling it up with stuffing. That meaty roll that you like looked a bit brown in colour so most likely beef roll (cha bo) which should be very fragrant with garlic. The whiter version is pork (cha lua). Basically they grind the meat to a paste and season it then steam them wrapped in banana leaf.

16:28 When you order "bánh xèo" in the central region of Viet Nam, it has some different from other. Smaller, thicker and of course it goes with the iconic sauce instead of fish sauce. Also in that nylon bag they include vegetable, pickle papaya and carrot, traditional chili sauce ( to mix with the "iconic sauce" if you would some spice ) and rice paper ( a type that we use to eat with "bánh xèo" ). We ( the local ) usually take a rice paper, put vegetable, pickle stuff, "bánh xèo" and wrap it up then dip into the sauce. Fun fact that this is the way we do when consume dishes that go with with rice paper. 👀👍

The ingredients are still the same though, but instead of rolling the rice sheet, they mix it with other ingredients and make it a dish. Btw the name "banh cuon" doesn't refer to the entire dish, it specifically refers to the rolled rice sheets you eat, the other components are just accompaniments that make the dish more flavourful
