Iced Lemon Cookies

When I taught Middles School, one of the highlights of the year was Back-To-School Night. That's when all the parents would come in and take a look around at everything teachers had done with the kids since September.
Well, at our end of the hallway, Sam, the 7th grade Home Ec teacher and I had a live bake off of student dessert entries that we named COOKIE WARS! This episode features one of the finalists of our 2013 Cookie Wars. You will love this light, lemony cookie - perfect for summer...or anytime!
Iced Lemon Cookies
Ingredients:
½ c. butter softened
½ c. sugar
½ c. powdered sugar
1 egg
½ c. vegetable oil
1 t. grated lemon peel
2 & ½ c. flour
½ t. baking soda
½ t. cream of tartar
Bake in a preheated 350 for 9 - 10min.
Cool completely before icing.
Icing
2 c. powdered sugar
3-4 T fresh lemon juice
