I just made it and it was delicious but I didn't like the texture after adding the starch so I used my hand blender and it came out beautifully . Thank you for a great recipe ❤

Instead of water, use white wine :) adds a nice additional flavor profile.

I like it ☺️.. thanks a lot ❤️ But I think the corn starch adds a little flavour that I can tell like pudding .. maybe it's just me 🤭😂.. but is there other way to thicken it up with no starch .. Like can I add gelatin.. and how much exactly should I add to this recipe to substitute the starch??

I haven’t tried it with gelatin so I’d have to play around with the measurements. You don’t have to add the corn starch, it will just be runny without it and probably seep out of the cake layers.

You could use Ultra Gel. It's an instant food starch that works both hot and cold and the bag has substitution directions on it for cornstarch. I find it to be flavorless and doesn't give the cloudy look that cornstarch does. The only place I've found it is Amazon.

You can add some more sugar from the beginning and boil it longer until it gets thicker, about 20-25 min.

I've never used filling in a stacked cake. Will the layers shift or does the buttercream "dam" prevent shifting? Thank you for your help.

How long can you keep this? In the fridge/freezer, but also in the cake if you make it before hand?

It can be good in the fridge for about a week and the freezer for about three months as long as it’s well sealed. On a cake in the fridge for about 4 days but I would recommend eating it the following day.

Yes, it just depends on how thick you layer in the filling but it should be plenty

I don’t think this recipe would have enough liquid to do it with dried fruit. I’d have to play around with adding more liquid to be sure

If you’ve already boiled it and then mixed the corn starch in and boiled it a little longer until it was all mixed, it should thicken up once it cools to room temperature.

I try and add the cornstarch mixture a little at a time and if it seems to be thick enough, I refrain from adding anymore. Because you’re working with fresh fruit, some fruit can be more or less juicy so I do have to feel it out sometimes.

Yes you can. I’d cut the water in half though because the frozen strawberries will have more liquid.

Store unwashed berries in mason jars. They last longer than any other method.

After boiling it, you can try straining it, then return it to the heat and boiling, and then add the corn starch mixture

Nope. For this recipe that is the perfect consistency for a stable filling that won’t drip between layers and ruin a decorated cake and it’s delicious. But everyone has their own preferences.
