I just made it and it was delicious but I didn't like the texture after adding the starch so I used my hand blender and it came out beautifully . Thank you for a great recipe ❤

I haven’t tried it with gelatin so I’d have to play around with the measurements. You don’t have to add the corn starch, it will just be runny without it and probably seep out of the cake layers.

You could use Ultra Gel. It's an instant food starch that works both hot and cold and the bag has substitution directions on it for cornstarch. I find it to be flavorless and doesn't give the cloudy look that cornstarch does. The only place I've found it is Amazon.

You can add some more sugar from the beginning and boil it longer until it gets thicker, about 20-25 min.

It can be good in the fridge for about a week and the freezer for about three months as long as it’s well sealed. On a cake in the fridge for about 4 days but I would recommend eating it the following day.

If you’ve already boiled it and then mixed the corn starch in and boiled it a little longer until it was all mixed, it should thicken up once it cools to room temperature.

I try and add the cornstarch mixture a little at a time and if it seems to be thick enough, I refrain from adding anymore. Because you’re working with fresh fruit, some fruit can be more or less juicy so I do have to feel it out sometimes.

Nope. For this recipe that is the perfect consistency for a stable filling that won’t drip between layers and ruin a decorated cake and it’s delicious. But everyone has their own preferences.
