I know this sounds dumb, but I wish you would break down the process in kneading dough. I got booted from the fresh dough section in one of my college jobs. Luckily, there as tons of other stuff to do. The dude was getting so mad at me, "Knead the dough!" Please man, it might sound silly, will you please break down the steps/science etc. behind kneading the dough pretty please? I know I can look it up in a heartbeat, but I'm curious how you would break it down.
